Spinach Cottage Cheese Flat Bread – Palak Paneer Paratha

  • 2 cups spinach chopped
  • 3 cups whole wheat flour ( I used organic wheat flour)
  • 1 cup grated cottage cheese Or crumbs
  • 1 tbsp cumin seed
  • 1.5 tbsp white sesame seed (safed til)
  • 100 gms thick yogurt
  • 1 tbsp coriander seed powder (dhaniya powder)
  • 1 tbsp garam masala powder
  • 1 tbsp chat masala
  • 1 t/s turmeric powder
  • 1 tbsp fennel seed powder (saunf powder)
  • 1 tbsp red chili powder
  • 2 tbsp water to knead the dough
  • a pinch of asofoetida (hing)
  • 1 tbsp salt Or black salt
  • 1 tbsp oil + 3 tbsp clarified butter (ghee) for frying parathas
How to make the recipe?
  1. Combine all the ingredients except oil. Start kneading with full pressure until soft dough is formed. Don't add too much water as the spinach will also leave some moisture along with yogurt. Add as much water as required.
  2. Lastly add oil to bind the dough. Cover with a damp cloth and keep aside for ten mins.
  3. Now shape into small balls. Roll with a roller into oval Or round shape about 3 inches.Place a pan over high fire. Once pan is hot place the rolled paratha.
  4. Roast from both sides with the help of spatula. Smear ghee Or oil on both sides while frying.
  5. Once you see the brown golden specks on both sides. Remove them and place them in a casserole Or keep them covered. Repeat the same with the rest of dough.
  6. Serve hot with yogurt, raita, chutney, lentils, veggies etc.
1. Parathas are generally made on high heat with oil Or ghee. But be careful don't burn your parathas.
2. You could add grated cheese for more favor and variation.
