Palak Lachcha Paratha

  • 2 cups whole wheat flour
  • 2 tbsp clarified butter (ghee) + some more for frying paratha
  • 14 spinach leaves + 1 tbsp water
  • 1 tbsp red chili powder
  • a pinch of asofoetida (hing)
  • 1 tbsp coriander seed crushed
  • 1 tbsp fennel seed crushed
  • 1 tbsp cumin seed crushed
  • 1 tbsp white sesame seed (safed til)
  • 1 tbsp black sesame seed (kala til)
  • ½ t/s turmeric powder
  • 1 tbsp dried raw mango powder (amchur powder)
  • black salt as per taste
How to make the recipe?
  1. Rub ghee on whole wheat flour. It should appear like bread crumbs.
  2. Take spinach leaves wash them, cop them and grind them. Grind them with
  3. tbsp water into a processor until smooth puree is formed.
  4. Combine puree, red chili powder, turmeric powder, cumin seed, fennel seed, white sesame seed, black sesame seed, asofoetida, raw mango powder and black salt.
  5. Knead into a smooth dough. Dough shouldn't be too sticky Or firm.
  6. Make two inch balls. Shape each ball into round Or oval shape about 3 inch with the help of roller. Spread some ghee over it.
  7. Now start folding from alternate sides until you reach the end. Fold both ends and press them gently. Repeat the same with rest of dough.
  8. It's important you roll the folded balls gently and only from one side. Don't flip and roll over other side else the parathas won't get nice layers. So dust some flour and roll gently over one side.
  9. Take frying iron skillet Or pan. Once pan is nicely heated. Fry the parathas on high heat both sides until golden specks are visible.
  10. Splutter some ghee over both sides.
  11. Serve hot parathas with yogurt, vegetables, pickles etc.
