Lemon Vodka Sables

Cute and delicious Lemon Sables with a shot of vodka! Sables are a French dish which is a classic, descent version of cookies.
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 300 gms refined flour
  • 180 ml butter salted Or unsalted ( I used unsalted)
  • 100 gms granulated sugar
  • 1 egg yolk
  • 1 lemon zest Or 2 lime zest
  • ¼th t/s of baking powder
  • ¼ t/s salt
  • 2 tbsp butterscotch essence
  • 2 tbsp vodka of any good brand
  • some candies (tutti fruity)
  • 2 tbsp milk + 2 tbsp sugar for brushing sables)
How to make the recipe?
  1. Sift flour + baking powder and keep aside. Cream butter + sugar until light and fluffy.
  2. Add egg yolk, salt, butterscotch essence and lemon zest.
  3. Mix in flour and start kneading into a dough. Add vodka to it. If the dough is dry add little more of vodka. The dough should be smooth and soft. Lastly add candies (tutti fruiti).
  4. Divide the dough shape into 2 logs. Wrap with a cling film and freeze for an hour.
  5. Gently unwrap the film and slice the dough with a width of ½ cm each Or as you requires. It shouldn't be too thin Or too
  6. thick.
  7. Brush the cookies all over Or towards the edges with milk. Roll over sugar. Place them over baking tray. Keep some space as they would need space to rise.
  8. Bake at 180°C for 5 mins then reduce the temperature to 160°C and bake for 8 to 9 mins Or once the edges of sables turns
  9. light brown. Turn sables upside down and bake for 2 mins more. Allow to cool and serve with fruit jam Or preserves.
1. Please don't underbake Or overbake sables. If your oven is hot then bake them at lower temperature with longer duration. As every oven has different capacity and temperature.
2. Adding vodka is optional. If your dough is too dry then add some water to it.
3. Freezing dough is important for better results.
4. You can freeze the dough and use them whenever you like. But sables taste better when made in the first few days.
