Badam Puri Recipe - Almond Puris (deep fried Indian bread)

recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 1 tbsp clarified butter (ghee)
  • 3 cups oil / ghee for deep frying (I used oil)
  • 3 cups whole wheat flour
  • 75 gms almonds with skin
  • 10 -12 cashewnuts
  • 6-7 raisins
  • 1 tbsp nigella seeds (kalaunji)
  • 1 tbsp white sesame seed (safed til)
  • 1.5 tbsp melon seed (magaj)
  • 1 t/s poppy seed (khuskhus)
  • ½ t/s salt
  • 1 tbsp jaggery powder Or sugar (I used organic jaggery)
  • 1 cup water Or as required
  • a pinch of nutmeg powder
How to make the recipe?
  1. Combine flour, salt and nutmeg powder.
  2. Add nigella seed, jaggery powder and ghee. Rub ghee with your hand into
  3. the flour. It should appear like bread crumbs.
  4. Now grind nuts, melon seed, raisin, sesame seed and poppy seeds into a blender.
  5. Add little water if required for grinding.
  6. Once the paste is smooth add a cup of water to it. Stir it nicely.
  7. Add the above mixture to the flour. Knead into a soft, smooth dough.
  8. Add water if required. The consistency of dough shouldn't be too soft nor too firm.
  9. Cover the dough with a damp cloth. Allow to rest for 10 mins.
  10. Heat oil / ghee in a deep vessel.
  11. Meanwhile make about 25 balls about an inch size. Roll them individually as normally you roll for puris.
  12. Deep fry the puris until they puff up and golden brown in color from both sides.
  13. Place them on absorbent napkin. Serve Badam Puris hot with tea Or milk.
