Phirni is a traditional Indian sweet made with rice flour, sugar and milk mainly. Phirni is chilled and served in earthen wares.
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 500 ml milk
  • 1.5 tbsp rice flour ( I used organic rice flour)
  • 125 gms powdered sugar Or as required
  • ¼ t/s cardamom powder
  • ¼ t/s dry ginger powder
  • ¼ t/s nutmeg powder
  • few drops of almond essence
  • ½ t/s vetiver essence or water (kewra) optional
  • 20 gms almond flakes
  • 30 gms pistachio flakes
  • a pinch of salt
  • few saffron strands infused in hot milk
How to make the recipe?
  1. Boil milk in a wide bottomed sauce pan. Once milk reaches it's boiling point.
  2. Take 2 tbsp hot milk in a mixing bowl with rice flour. Combine all nicely it should be smooth and lump free.
  3. Now add this mixture to the milk. Cook until milk thickens and keep stirring else rice flour might get stuck at the bottom.
  4. Time to add powdered sugar, all spice powder, almond essence and salt.
  5. Take some milk mixture and combine saffron. Stir well and add to the boiling mixture.
  6. Simmer for 2 mins more then switch off the gas.
  7. If you are using clay / mud bowls then soak water with some rice overnight. Then wash the bowls nicely before using else it might leave stains on your dessert.
  8. Pour the mixture over the serving bowls. Cover with a foil over the bowls then allow to set in the fridge for an hour Or so.
  9. Garnish with almond flakes Or pistachio flakes.
Notes
1. As mentioned earlier if you are using clay / mud bowls then soak water with some rice overnight. Then wash the bowls nicely before using else it might leave stains on your dessert.
2. Ensure you make phirni on low heat and keep stirring else there are chances for it to get lumpy Or get burnt at the bottom.
3. I have used pistachio flakes you could use any nuts you like.
4. Also I have used mixed spice powder you could use only cardamom powder.
5. Adding saffron strands is optional.
