Mawa peda recipe made from evaporated milk (mawa), milk, milk powder, sugar and cardamom.
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 100 gms mawa (evaporated milk) grated or crushed
  • ½ cup milk
  • few saffron srands infused in 2 tbsp hot milk
  • 1.5 tbsp ghee
  • 2.5 tbsp milk powder
  • 2.5 tbsp milk masala powder or cashew powder
  • ¼th cup sugar ( I used organic)
  • a pinch of cardamom powder
  • a pinch of nutmeg powder (optional)
  • few orange color mixed with water (optional)
  • chopped pistachio flakes for topping pedas (optional)
How to make the recipe?
  1. Place a wide bottomed pan with ghee.
  2. Once ghee is warm add the mawa. You could mix with your hand or grate them.
  3. Add milk, saffron infused milk and sugar.
  4. Keep stirring for a minute on low flame. Just keep pressing the grated mawa with a spatula while stirring.
  5. Add milk powder and milk masala powder. Keep stirring.
  6. Finally add cardamom and nutmeg powder.
  7. Simmer the mixture but keep stirring all the time on low heat.
  8. You would see the mixture starts getting thicker and leaves the edges of the pan. It would appear like a thick lump of mass moving together.
  9. Switch off the gas and allow the mixture to cool down. You could refrigerate and then use the mixture. Rub some oil or ghee and form small balls. Flatten them with your palm and give them some imprints or design. Serve the mawa pedas with some chopped nuts or rose petals.
Notes
1. If the mixture has lot of moisture add some milk powder and cook for a longer time.
2. If the mixture is too dry then add few drops of milk.
3. Milk masala powder is optional if not available ground some cashews or almonds and dry grind them to make a powder. But don't grind too much else the butter would come out of nuts.
4. Instead of saffron use little turmeric powder for yellow color.
