Easy Potato Wedges Recipe to fulfill your hunger craving.
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 4-5 big sized potatoes (aloo)
  • 1 tbsp red chili flakes
  • 1 tbsp black pepper powder (kalimirch)
  • 1 tbsp lime juice (nimbu ras)
  • ½ tsp sichuan pepper powder (teppal powder) optional
  • 4-5 thyme strands chopped coarsely or torn with your hand
  • 2 tbsp coriander leaves chopped finely
  • 1.5 tbsp rice flour
  • 2 cups oil for deep frying or ½ cup oil for shallow frying + 1 tsp oil for marinating potatoes
  • salt as required
How to make the recipe?
  1. Parboil the potatoes in a vessel with water. Altermatively pressure cook them until 2 whistles.
  2. Peel the skin and chop them lengthwise into thick width.
  3. Sprinkle red chili flake, pepper powder, sichuan pepper, lime juice, thyme, coriander leaves and salt.
  4. Combine all nicely and sprinkle rice flour. Toss all nicely.
  5. Heat pan with oil. Once oil is hot shallow fry or deep fry the wedges until golden brown from all sides over medium heat.
  6. Place them on absorbent napkin.
  7. Repeat the same with the rest of wedges. Serve potato wedges warm with your favorite dip or sauce.
Notes
1. Instead of chili flakes you could use chili powder, paprika. Also you could use oregano, rosemary etc.
2. I have used little sichuan pepper as love the taste of it but it's optional.
3. You could also bake the wedges just mix all spices, herbs and drizzle 2 tbsp of oil over them. Bake in a preheated oven at 180ÂșC for 18-20 mins or until golden brown from top.
4. If you love Indian spices you could use haldi, chili powder, pepper powder, chat masala and amchur powder.
