Easy Eggless Banana Walnut Cake!
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 1 cup flour
  • ½ tsp baking powder
  • 1 tsp baking soda
  • a pinch of salt
  • 1 tbsp corn flour
  • 1 tbsp milk powder
  • ¼th cup oil or butter ( I have used ricebran oil)
  • 100 gm condensed milk
  • 10 tbsp of heaped mashed bananas
  • ½ tsp nutmeg powder
  • 1 tsp vanilla essence
  • 1 cup walnut
How to make the recipe?
  1. Mash the bananas with fork or just exercise your finger until they are mashed well.
  2. Sift flour, baking powder, baking soda, corn flour, milk powder and salt.
  3. Combine oil with condensed milk into a separate vessel. Mix nicely.
  4. Now add mashed bananas.
  5. Mix all nicely until all incorporates well.
  6. Add nutmeg powder and vanilla essence and mix.
  7. Now fold sifted dry ingredients into batches of 3 into the wet ingredients.
  8. Pour the batter half into the greased pans.
  9. Now spread some walnuts across.
  10. Again cover the walnuts with the rest of cake batter. Finally top again with walnuts.
  11. Bake in a preheated oven for 30-35 mins for 180ºC or until the skewer comes out clean.
Notes
1. You could use any shaped pan or loaf pan. I have use detachable pans.
2. It's important to preheat the oven for 15 mins at 180ºC before baking the cake.
3. Please don't open the oven doors while cake is baking. Else your cake might sink towards the center.
4. Once your cake starts giving fragrance or starts leaving the edges of the pan or your toothpick comes out clean your cake is ready.
5. Lastly this cake tastes the best next day eat them warm or chilled.
