Rainbow Avial Recipe- South Indian Avial Recipe

  • 1 carrot chopped vertically
  • 8 to 9 french beans chopped
  • 2 to 3 arbi chopped (colocasia roots skin peeled)
  • 7 to 8 broad beans chopped
  • 2 to 3 drumsticks chopped
  • 50 gms red pumpkin chopped
  • 8 to 10 asparagus chopped
  • 1 raw banana chopped and immersed in water
  • 18 to 20 curry leaves
  • 2 cups water
  • ½ fresh coconut grated Or about 150 gms fresh grated coconut
  • 1.5 tbsp cumin seeds
  • 1 green chili chopped
  • 1 t/s turmeric
  • 100 gms yogurt
  • 2 kashmiri chilies
  • 2 tbsp oil
  • 1 mustard seeds
  • a pinch of hing
  • salt as per taste
How to make the recipe?
  1. Firstly wash all veggies and chop them into medium sized pieces. As you can check them in the pic below.
  2. Now peel off raw banana skin and chop them into medium size. Immerse them into water for some time.
  3. Take fresh grated coconut, green chili and cumin seeds. Combine them into a processor.
  4. Grind until smooth paste is formed. Keep this aside.
  5. Take a big wok Or vessel add water. Keep the heat on medium mode. Now combine all chopped veggies including raw banana and curry leaves into water.
  6. Let this boil on medium flame for about 5 to 7 mins. Now add turmeric.
  7. Allow the vegetables to cook for another 2 to 3 mins Or until it starts bubbling.
  8. Now add coconut paste. Stir well cook for another 2 to 3 mins.
  9. It's time to add yogurt. Again combine all well with a spoon Or spatula. Let this cook for another 3 to 4 mins more.
  10. Finally add salt for seasoning.
  11. Cook for 2 mins more Or until vegetables are tender and cooked well.
  12. For tadka take oil in a small wok. Once oil is hot add mustard seeds, kashmiri red chili and pinch of hing. Once they crackle well mix them into avial.
  13. Stir all well now your avial is ready to be served. Garnish with coriander leaves.
  14. Serve hot as stew, soup Or with steamed rice. Even dosas and idlis will taste great with avial.
