Easy Indian Chole Masala Recipe
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 2 tbsp ghee (clarified butter) Or oil Or butter
  • 2 cups boiled chole
  • 1 bid sized onion chopped
  • 1 big sized tomato chopped
  • 1 green chili finely chopped
  • 1 tbsp sugar
  • A pinch of hing (asafoetida)
  • 1 tbsp chat masala
  • 1 tbsp amchur powder (mango powder)
  • salt as per taste
  • 5 to 6 curry leaves
  • 1.5 inch ginger paste
  • 1.5 tbsp saunf powder (fennel seed powder)
  • For Spiced Powder-
  • 1.5 tbsp dhaniya seeds (coriander seep powder)
  • 2 to 3 red kashmiri chilies halved into 2
  • 4 to 5 cloves
  • 8 to 10 peppercorns
  • 2 tbsp cumin seeds
  • 8 to 10 cashewnuts
  • 1 inch cinnamon stick
  • 1 t/s methi (fenugreek seeds)
  • 2 bayleaves
  • 5 to 6 curryleaves
  • 2 tbsp black sesame seeds
  • 2 tbsp white sesame seeds
  • 1 green cardamom
  • salt as per taste
How to make the recipe?
  1. Firstly soak choles overnight with enough wtaer. Next day pressure cook them until 5 whistles.
  2. Until choles are getting cooked we will prepare the spiced powder. Take a frying pan and keep on medium fire. Combine all ingredients mentioned for spiced powder.
  3. Roast them on slow fire and keep stirring in between. Just roast them for 3 to 4 mins Or until slightly brown. Please don't burn them. Wait until it cools down.
  4. Now grind them into a processor until powder is formed. Take another heavy bottomed sauce pan add ghee. Keep the fire on low heat.
  5. Add chopped onion along with ginger paste.
  6. Saute onion for 2 mins more. Add hing and salt. Stir all well.
  7. Add green chilies and saute for 30 secs.
  8. Saute tomatoes for another 2 mins. Add sugar as well.
  9. It's time to combine spiced powder. Scrape all powder from all sides and stir well.
  10. Add little broth Or water else spice might stick at the bottom.
  11. Let this cook for a while until it starts bubbling.
  12. Now add boiled chickpeas and mix well.
  13. Put chat masala, amchur powder, fennel seed powder and salt for seasoning.
  14. Lastly, add crushed curry leaves Or torn curry leaves. Simmer for another 5 to 6 mins more. Keep stirring in between. Finally add ½ tbsp ghee on the top. Mix all nicely.
  15. Your Indian Chole Masala is ready. Garnish with coriander leaves. Serve hot on a platter with bhatura, puris Or chapatis.
Notes
1. You could also add lime juice if you wish to have more tanginess.
2. I have used rocksalt instead of salt.
3. You can also add melon seeds into spiced powder.
5. If you need gravy Or consistency than when your Indian Chole Masala is ready. 6. Pour 1 cup yogurt and mix all. Your Dahi Chole is ready :)
