Eggless Vanilla Cookie recipe is an easy recipe to make home at any time of the day. The cookies are soft, crunchy from out and just melts in your mouth.
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 200 gms all purpose flour or refined flour (maida)
  • 1 tbsp corn flour or polenta
  • ½ tsp salt
  • 1 tsp baking soda or baking powder ( I used baking soda)
  • 100 gm butter Or olive oil at room temperature ( I used butter)
  • 80 gm powdered sugar / icing sugar or as required
  • 1 tbsp milk or as required
  • 2 tbsp milk powder
  • 1 t/s salt
  • 1 tbsp vanilla powder (optional)
  • 1 tbsp vanilla extract or vanilla essence
How to make the recipe?
  1. Preheat oven at 180°C exactly 15 mins before baking. Grease baking tray with butter Or olive oil. Sift flour, corn flour, baking powder,milk powder and salt.
  2. Add vanilla powder.
  3. Combine all the dry ingredients nicely.
  4. Firstly cream butter with sugar until soft and fluffy. Preferably use electric beater I used my hand to beat.
  5. Add milk and beat again.
  6. Also add the vanilla extract and mix nicely.
  7. Gradually fold in the flour with the help of spatula into three batches.
  8. It should look like this.
  9. Chill the dough for 15-20 mins or leave aside to rest for some time. I don't have a pic for this one.
  10. Make small balls and place them at a distant with each other on the greased dish / tray.
  11. Rub some oil or butter towards the bottom of the glass. You could use a proper glass I have used a metal glass as got hold of that while making these ;) .... Press the bottom over the balls gently pressing them to round.
  12. Make criss-cross pattern with toothpick or fork. You could just leave them plain round instead of designing.
  13. Bake in a preheated oven at 180º C for 14 mins or until light brown towards the edges.
  14. Allow to cool down. Once at room temperature then store them in air tight container. Serve your eggless vanilla cookies with tea or coffee or hot chocolate milk.
Notes
1. You could use nuts for topping of vanilla cookie.
2. Also you could use olive oil instead of butter for low cal.
3. Please don't overbake them unless you want hard cookies.
