  4. Now mash them with the help of masher.
  5. Add chopped tomatoes and boiled veggies Keep stirring and allow them to cook for 2-3 mins.
  6. Also add ginger-garlic paste.
  7. Saute for 2 mins once tomatoes are cooked, mash all of them with the help of masher.
  8. Also add a tbsp of butter. Cook until oil separates from the bhaji.
  9. Take a different pan add 1 tbsp butter.
  10. Add chopped onion and saute until it changes to pale brown color.
  11. Now add the pav bhaji masala, kashmiri a red chili powder, turmeric powder, garam masala powder, kasuri methi, pinch of asafoetida (hing) and salt.
  12. Saute for 2 to 3 mins. Add a little water if the onions are getting too dry.
  13. Transfer this mixture to the cooking bhaji.
  14. Now mix all nicely. Add black salt for seasoning. Check the consistency add water if required and alter any spices if required. Cook until bhaji bubbles switch off the gas. Squeeze some a lime juice, chat masala, Mix all nicely.
  15. Serve cheese pav bhaji with dollop of butter, chopped onion, coriander leaves and lemon wedges. Also don't forget to serve the buttered masala pav's.
For Masala Bun/ Pav:
  1. Take the pav and slit in the center of the pav. Keep a pan on low heat. Add 1 tbsp butter along with pav bhaji masala. Fry both sides of pav into this. Just slightly fry them don’t burn them.
  2. Stuff the pav with few onions and coriander leaves. Some people also like to stuff pav bhaji into masala pav and eat. It’s up to you how you like to eat your pav bhaji.
  3. I like my pav bhaji topped with butter, some chopped onions and chopped lime. Along with hot buttered pavs. For accompaniment I would love to eat onion-tomato salad and Fried Papad.
  4. Serve the pav bhaji with masala pav hot along some chopped onion.
Notes
1. .You could also top your pav bhaji with grated cheese. That's your cheese pav bhaji
2. I have used everest brand for pav bhaji masala. You could use any good brand.
4. If you are calorie conscious then don't add too much butter. Use oil instead.
5.Generally pav bhaji has medium consistency nor too thick nor thin. So add water accordingly.
5. You could mash the veggies until mushy or leave some texture. Both would have a different taste but a good taste.
