Easy Dudhi Halwa Or Lauki Halwa Recipe.
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 2 cups freshly grated dudhi (bottlegourd skin lightly peeled)
  • 3 tbsp ghee (clarified butter)
  • 1 cup milk
  • 250 ml sweetened milk
  • ½ t/s cardamom powder
  • ½ cup raisins chopped
  • 12-14 cashewnuts chopped
  • 14-16 almonds (blanched in hot water for 5 mins and skin peeled)
  • 2 tbsp vanilla powder (optional)
  • 2 saffron strands
  • 3 tbsp khoya (also called as mawa / evaporated milk)
  • a pinch of salt
How to make the recipe?
  1. Take a heavy bottomed wide saucepan. Place it on low heat. Add ghee to it.
  2. Put all grated bottle gourd into it. Stir nicely for 4 to 5 mins.
  3. Combine milk, sweetened milk, saffron strands, vanilla powder if using. Allow to cook for 7 to 10 mins on slow fire. Keep stirring in between.
  4. Now add chopped cashews, blanched almonds, cardamom powder, salt and raisins. Cook for another 5 mins and keep stirring.
  5. It's time to add khoya (evaporated milk). The mixture would be ½ of its size. It will start getting thicker.
  6. Cook until water evaporates and continue stirring.
  7. Switch off the gas voila your dudhi halwa is ready, Serve Hot Or Chilled. I love the chilled one. Top it with rabri Or icecream.
Notes
1. You could use jaggery Or brown sugar for a healthy version of Dudhi Halwa.
2. Also, you could add a dash of green food color. I dislike food coloring so haven't added to my dessert.
3. Use your choice of nuts.
