My Style Chicken Crispy Chinese

Indian's have a great taste for Chicken Crispy Chinese. Lot of joints in India offer Chicken Crispy Chinese as their starters. My hubby loves Chicken Crispy Chinese and even my brother Rohit loves them to the core. I thought of giving them a Chinese food surprise. So I had made for them Chicken Crispy Chinese and Chicken Chinese Fried Rice Indian for the dinner. They loved them a lot and I was happy they liked them so much. Sometimes it's good to see people happy eating your handmade food right :)

Chicken Crispy Chinese

There are many ways of making Chicken Crispy Chinese. Some make batter of corn flour, some make of refined flour. I though of making this batter in my own style. I have added yeast to the batter to give that boost to the batter. Also yeast gives a nice look and texture to your chicken crispies. You could check thai red chicken curry recipe here.

Actually I have been getting a lot of requests to make Chicken Crispy Chinese. Hence I thought of making it for them. I am not a great fan of chicken I love fish I am trying to eat as less non veg as I can. Trying to be a vegetarian however fish is my weak point. Also because I don’t like egg so I have to rely on fish for protein intake.

Coming back to Chicken Crispy Chinese. You can actually club in a lot of veggies like pumpkin, potatoes, broccoli, cauliflower, carrots etc. It’s a good way to make your family eat vegetables as they are coated so well with the batter. They are crispy so they won’t be able to identify which veggies they are eating! That’s the best part I usually make such combos and give to my hubby as he also has a lot of fuss with veggies ;

Total Time: 30 mins batter preparation + 30 mins frying + 5 mins making

Serves: 4 to 5 people

Ingredients:

  1. 500 gms chicken (chopped into small pieces about an 1 Or 1.5 inch)
  2. 2 tbsp oil + 2 cup oil for frying the veggies
  3. 6 spring onion chopped (whites and green separated)
  4. 2 green chilies finely chopped
  5. 1 carrot chopped into long and thin slices just like potato chips
  6. 1 potato chopped into thin and long pieces
  7. 100 gms pumpkin chopped into thin and long pieces ( skin removed)
  8. 100 gms broccoli florets
  9. 6 baby corn chopped into thin long slices
  10. 1/2 red bell pepper
  11. 1/2 yellow bell pepper
  12. 7 to 8 garlic minced
  13. 1 inch ginger minced
  14. 2 tbsp dark soy sauce
  15. 2 tbsp chili-tomato sauce
  16. 2 tbsp oyster sauce (optional)
  17. 1 tbsp sugar
  18. salt Or ajinomoto as per taste (  I have used salt )
Batter:
  1. 3 tbsp white sesame seed
  2. 1 cup refined flour
  3. 2 cup wheat flour
  4. 1/2 cup corn flour
  5. 1 cup lukewarm water
  6. 2 tbsp dry yeast
  7. 1 tbsp sugar
  8. pinch of salt

Method:

Very important clean and chop all veggies as instructed above. Keep them aside. Let’s make the batter for frying veggies. Take yeast in a cup with warm water. You should be able to dip your finger in the water. What I do is take water in a cup and microwave for just 30 secs and add yeast to it.  Now add sugar as sugar helps in activation of yeast. Give it a stir add a pinch of salt. Now keep it in a humid place Or in your oven with beep on for 10 mins. If your yeast is bubbling and frothy it’s good to use. But if it’s not frothy please discard and replace with another yeast.

Chicken Crispy Chinese

Sift all flour, salt and keep aside. Put yeast along with water. Add a cup of lukewarm water. Stir all nicely with a spoon. Frisk with a beater if required.

Chicken Crispy Chinese

The batter should be lump free and smooth. It should be of thick consistency enough to coat your veggies. If it’s too thin it won’t coat your chicken and veggies. If it’s too thin add some flour if it’s too thick add little water. Keep this aside for 20-25 mins in a humid place.

Chicken Crispy Chinese

Take a deep frying pan with oil. Place it on medium fire once oil is hot. Reduce the heat. Spread white sesame seed on a plate. Take sliced potatoes and dip one by one into the batter enveloping completely with the coating. Dip them into the oil. Repeat the same with all other veggies. Once nice golden brown and crisp remove them from fire.

For chicken also coat each piece in the batter. Just sprinkle some white sesame seeds on them. Now deep fry them until golden brown and crisp. Repeat the same process with all chicken pieces. Place them on absorbent napkins for oil absorption.

Now take a big wok. Add oil once oil is hot. Add minced garlic and ginger. Add whites of spring onion. Also put red and yellow bell pepper. Add sugar and green chilies. Saute nicely for 2 to 3 mins.

Chicken Crispy Chinese

Add chili-tomato and soy sauce both. Put all the fried veggies and chicken pieces. Stir all nicely for 2 mins on high fire.

Chicken Crispy Chinese

Lastly add salt and greens of spring onion. Stir for another 2 minutes. Now switch off the gas. Your Chicken Crispy Chinese is ready. Serve hot with Chinese stir fried rice Or noodles.

Chicken Crispy Chinese

Tip:

  • You could use your choice of veggies like carrots, leeks, squash, baby corn, potatoes etc.
  • I have used yeast if yeast isn’t available add 2 tbsp baking powder to your batter. let it rest for 30 mins.
  • Ensure while frying the veggies keep gas on medium mode else your veg crispy would be burnt crispies ;)

I tried this yestrday and it was so so so sos sos yummmmmmmyyyyy?
It was really very crispy as i added a little bit of Rice flour, and maria please one request can you give me the recipe of chilli chicken as whenever i make its always a disaster as i have guests coming this weekend ao if you could pls.

Thanks Sunita :) I am happy it came out crispy and yummy! I am not eating chicken because of summer season. But don’t worry you can follow the recipe of Tofu Chili and replace chicken with tofu.
