Easy Mushroom Pilaf Indian
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 2 cup rice (300 gms)
  • 1 packet of button mushrooms washed and chopped into big chunks
  • 3 tbsp clarified butter (ghee)
  • 2 bay leaf
  • 5 to 6 cloves
  • 1 inch cinnamon stick
  • 1 tbsp caraway seeds (shahi jeera)
  • 8 to 10 peppercorns
  • 1 tbsp ginger-garlic paste
  • ½ cup curry leaves
  • 1 tbsp curry leaf powder
  • 1 tbsp biryani masala
  • 1 t/s turmeric powder
  • 1 tbsp fennel seed powder
  • 1 tbsp cumin seed powder
  • 1 tbsp coriander seed powder (dhaniya)
  • 1 tbsp red chili powder
  • 1 tbsp garam masala powder
  • 2 onion julienne
  • 2 potatoes chopped into big chunks
  • 14 to 16 cashewnuts
  • 8 french beans chopped
  • 1 tbsp dark soy sauce
  • 2 green chilies chopped finely
  • 1 cup chopped greens of spring onion (optional)
  • ½ red pepper chopped into cubes (optional)
  • sea salt as per taste
  • 1 tbsp sugar
  • 4.5 cups water for cooking
How to make the recipe?
  1. Place the pressure cooker without the lid with clarified butter on a medium flame. Once it becomes hot add the whole ground spices (bayleaves, peppercorns, cinnamom, caraway seeds, cloves). Also add ginger-garlic paste.
  2. Also add curry leaves little sea salt, onion, green chilies, cashewnuts and sugar. Saute until onion is golden brown in color.
  3. Now add potatoes along with powdered spices from number 11 to 18. Stir all nicely.
  4. Do add chopped french beans. Combine all nicely.
  5. Add mushrooms and saute again. Finally add rice + water + bell pepper + greens of spring onion, soy sauce and sea salt for seasoning.
  6. Cover with the lid and pressure cook until 3 whistles. Switch off the gas and allow the cooker to cool down. Serve hot with salad and raita
Notes
1. Always add mushroom towards the end as it takes least time to cook. cut them into big chunks else your mushroom will disappear in the pilaf.
2. You could add your choice of veggies in the pilaf
