Mixed Sprouts Biryani

Healthy Mixed Sprouts Biryani recipe for vegetarian friends full of flavor, aroma and taste!
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 1.5 tbsp oil Or clarified butter (ghee) + little extra while layering biryani
  • 250 gms basmati rice of good brand parboiled (I used organic basmati rice)
  • 2 cinnamon sticks
  • 2 to 3 bay leaves
  • 2 to 3 green cardamoms
  • 2 black / brown cardamom
  • 1 tbsp caraway seed (shahi jeera)
  • 4 to 5 cloves
  • 8 to 10 peppercorn
  • 1 star anise
  • 2 onion julienne
  • 1 tbsp biryani masala powder of any good brand (I used shaan biryani masala)
  • 1 tbsp red chili powder
  • 1 tbsp garam masala powder
  • 1 t/s turmeric powder
  • 1 t/s coriander seed powder
  • 1 medium sized potato
  • 350 gms mixed sprouts boiled Or cooked until tender
  • few mint leaves
  • salt as per taste
  • 1 cup water
  • few fried curry leaves, fried raisins and cashew nuts for garnish (optional)
For the paste:
  • 2 tomatoes chopped
  • 2 carrots chopped
  • ½ onion chopped
  • 1 t/s nigella seeds
  • 1 tbsp charoli / chiraunji
  • 1 tbsp flax seed
  • 1 tbsp white sesame seeds
  • 1 t/s black sesame seeds
  • 2 tbsp fresh grated coconut
  • 1 tbsp poppy seeds
  • 1 cup chopped coriander leaves
  • 1 green chili
  • 8 to 9 mint leaves
  • 2 tbsp water
How to make the recipe?
  1. It's important you precook the rice until half boiled. You can parboil them in the oven, pressure cooker Or vessel. Strain the
  2. water and keep the rice aside. Combine all the ingredients for the paste with little water. Grind until smooth paste is
  3. formed. Place it aside.
  4. Take a pan Or vessel in which you wanna cook biryani. Add oil / ghee and place on high heat. Reduce heat once the pan is hot add
  5. caraway seeds, bay leaves, cloves, peppercorns, cardamoms and star anise. Saute until they leave nice aroma.
  6. Time to add onion saute until they are dark brown in color.
  7. Add the green paste and saute until they bubble.
  8. Put all powdered spices like biryani masala, garam masala powder, turmeric, coriander seed powder and red chili powder.
  9. Now add chopped potatoes and give a nice stir.
  10. Add the cooked sprouts and salt for seasoning. Mix all nicely. Put a cup of water.
  11. Lastly, add parboiled rice and spread over the gravy. Sprinkle some mint leaves over it and pour some ghee over it.
  12. Cover with a lid placing a heavy object on it or cook in a pan with a glass lid. Cook on low heat for 20-25 mins.
  13. Garnish biryani with few fried curry leaves, fried raisins, and cashew nuts.
Notes
1. You could use any vegetable you like for this biryani.
2. Nonvegetarian could use chicken, fish etc.
3. I haven't used yogurt but if you wish to add yogurt instead of the seed paste.
4. Do a potato test before you switch off the gas. If the knife goes through a potato that means it's cooked.
