Vegan Sooji Halwa with Pineapples and Pistachios

  • ½ cup pistachio flakes Or chopped finely
  • 1.5 tbsp coconut oil
  • 1 cup almond milk
  • 1 cup of hot water
  • 1 cup roasted semolina
  • ½ cup chopped pineapple
  • 1 t/s cardamom powder
  • a pinch of nutmeg powder
  • ½ cup organic sugar Or sugar as per your sweetness
  • a pinch of salt
  • some cherries and flaked pistachios for garnish (optional)
How to make the recipe?
  1. Roast semolina on a pan for 2 to 3 mins on low flame. Place it aside.
  2. Take a deep pan add coconut oil. Saute pistachios in it for 30 secs.
  3. Add roasted semolina and saute for a minute.
  4. Also pour almond milk, add sugar, salt, cardamom and nutmeg powder.
  5. Give a nice stir to it.
  6. Finally add hot water, pineapples. Allow to cook for a some time and keep stirring until it thickens. You will see the texture of halwa changing.
  7. Switch off the gas.
  8. Serve hot and garnish with few cherries and pistachio flakes to make it more presentable.
