Egg Fried Rice Recipe a popular Indo-chinese food at Mumbai. This is quick, easy and healthy recipe.
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
For the rice:
  • 2 cups basmati rice or long grained rice boiled
  • 4-5 cups of water
  • salt as required
other ingredients:
  • 2 tbsp sesame oil or oil as required
  • 3-4 mediums sized egg
  • ½ cup finely chopped carrot
  • ½ cup of finely chopped cabbage
  • ½ cup pf chopped mushroom
  • ½ cup of finely chopped capsicum
  • ½ cup of finely chopped whites of spring onion
  • ½ cup of greens of spring onion
  • ½ cup of finely chopped french bean
  • 2 tsp garlic chopped finely
  • 2 tsp ginger chopped finely
  • 2 tsp celery chopped
  • 4 tsp soy sauce
  • 1 tsp vinegar
  • 1 tsp sugar
  • 2 tsp pepper powder
  • 2 tsp sichuan pepper powder
  • salt as required
How to make the recipe?
  1. Firstly rinse rice, boil with 5 cups of water and salt into a big vessel. Once the rice cook place the rice on a colander. Alternatively you could pressure cook the rice.
  2. While the rice is boiling chop all veggies and place aside. Heat 1 tbsp oil in a big vessel add garlic, ginger and celery leaves.
  3. After a minute add whites of spring onion. Saute for a minute.
  4. Now add eggs.
  5. Sprinkle little of pepper and sichuan pepper powder
  6. Keep stirring and cooking until egg cooks.
  7. Now remove the scrambled eggs and place them aside.
  8. In the same pan add the rest of oil add all chopped veggies. Place the pan on high heat.
  9. Add salt and keep tossing the veggies on high heat to retain their crunchiness.
  10. After 2-3 mins of stirring on high heat add soy sauce, sugar and vinegar.
  11. Add the scrambled eggs, rest of pepper powder, sichuan pepper and salt if required.
  12. Lastly add the boiled rice and greens of spring onion.
  13. Combine all nicely and switch off the gas.
  14. Serve your egg fried rice with schechuan sauce or any side dish.
Notes
1. Long grained rice or basmati rice would be perfect for fried rice.
2. Use veggies of your choice.
3. You could add red chili sauce and tomato sauce for variation.
4. Instead of eggs add chicken or paneer or tofu.
