Cauliflower Potatoes Indian Style – Punjabi Aloo Gobi

Easy Aloo Gobi Recipe
recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 250 gms cauliflower cut into florets Or small pieces
  • 3 tbsp oil ( 2tbsp for frying potatoes and rest for vegetable)
  • 2 medium sized potatoes sliced into small cubes
  • 1 tsp carom seed (ajwain)
  • 5-6 green chilies chopped lenghtwise
  • 1 tsp roasted cumin seed powder
  • a pinch of asofoetida (hing)
  • 1 tsp garam masala powder
  • 1.5 tsp turmeric powder
  • 1 tsp anardana powder
  • 1 tsp kashmiri red chili powder
  • 1 tbsp ginger julienne
  • 1 tsp amchur powder or chat masala
  • 1 tbsp crushed dry fenugreek leaves (kasuri methi)
  • few chopped coriander leaves for garnishing
  • black salt Or salt as per taste
How to make the recipe?
  1. Chop the cauliflower and place the florets into a vessel of boiling water. Add little salt switch off the gas, cover then pan with a lid.
  2. After 3-4 mins gently strain them over a colander.
  3. Now chop potatoes into big cubes and immerse them in enough water covering them. Add little salt and place aside. This process helps the potatoes not to change their color.
  4. Just before cooking this dish place them on a colander so that all the water strains out.
  5. Heat oil in a non stick pan add potatoes.
  6. Sprinkle a pinch of turmeric powder over them.
  7. Fry until they are evenly cooked and place them aside.
  8. In the same oil fry the cauliflower florets.
  9. Sprinkle a pinch of turmeric powder over them.
  10. Fry until they are half cooked.
  11. Place them aside.
  12. In the same add ajwain seed, green chilies and asofoetida.
  13. Once they crackle add the ginger julienne.
  14. Add red chili powder, turmeric and salt.
  15. Now add the fried potatoes and cauliflower.
  16. Cover with a lid containing water and simmer until they are cooked.
  17. Keep stirring in between.
  18. Remove the lid after 5 mins then increase the heat and stir fry for 2 mins then switch off the gas.
  19. Add garam masala powder, roasted cumin powder, amchur powder and crushed kasuri methi.
  20. Serve your aloo gobi hot with phulkas, roti, puris or chapatis.
1. It's advisable to immerse chopped cauliflower into lukewarm water with salt. If cauliflower has worms it will show up Or come out. So be wary of it.
2. You could use boiled potatoes instead of frying them.
3. If amchur isn't available then use chat masala.
4. Skip if kasuri methi isn't available in your region.
