Laadi Pav is nothing but round rolls of white bread termed as Laadi Pav commonly In India. A Laadi mean 6 pav 0r 6 bread together. Laadi Pav also called as Pav or Pao or Indian White Bread Dinner Rolls In India. I have been eating Pav since my childhood and quite vividly remember. During teatime dipping Pav with Butter into tea and relishing Pav. Eating Masala Pav with delicious Pav Bhaji hmmm yummy. Also eating Pav with Chicken Curry Or Mutton curry. I do remember binging on Wada Pavs in college days and school days.
Guess Pav is an integral part of Goan and Maharashtrian Cuisines. Even across the belt of Maharashtra people love eating Missal Pav, Wada Pav and Bhurji Pav. Bhurji Pav is nothing but scrambled egg along with Indian White Bread. For people who don’t know what is Missal. Let me tell you Missal is combination of some Sprouts, masalas, Onion and Farsaan. Even Missal Pav is one my favorites.
Any Street Corner Or Street Food Or Junk Food In India comprises of Pav. Pav is easily and readily available everywhere. Hygiene factor is not so great in most of the Bakeries who make this pav. Hence I thought of making these wonderful Laadi Pav at home. You would get Hygiene + Nutrition = Healthy Pav….. Hope you liked my attempt towards equations lol 🙂
I have used 80% wheat and 20% refined flour. So more fiber and nutrition you see. To be honest I didn’t keep the dough more longer to rise. As I was a little impatient to try these Laadi Pav. Yet my Laadi Pav – Indian White Bread Dinner Rolls turned out great. If I would have waited for dough to rise I am sure this would have been even more greater. Also was curious to try this Laadi Pav as it was my first attempt. I couldn’t click more snaps as it got over so soon!
Do try this amazing Recipe:
Preparation Time: 2 hours
Serves 2 to 3 People
Ingredients:
- 2 cups Wheat Flour
- 1 cup Refined Flour
- 1/4th cup Lukewarm Water
- 1 and 1/4th Cup Milk
- 2 tbsp Sugar
- 1 t/s Salt
- 10 gms Fresh Yeast or 2 t/s Dry Yeast
- 3 tbsp Butter
Method:
Take lukewarm milk add butter to it so that butter melts into it. Else you could microwave milk with butter for a few seconds . Ensure you wait until milk is lukewarm .
Mix yeast, lukewarm water along with sugar. Stir well and set aside until frothy. It should get frothy in 7 to 10 mins. If it’s not getting frothy that means your yeast is not good. Please discard yeast right away and use fresh yeast. Otherwise your dough won’t rise and result will be bad Pav.
Now add salt, butter-milk mixture to the yeast. Stir this mixture well. Slowly add the dry ingredients(wheat flour + Refined flour) little by little.
Use your finger tips to mix. When this all gets combined well. The dough would be sticky. Please put all your srtength to make this dough. roughly you would take about 10 to 15 mins to make this dough. You might be tempted to add more flour. Please don’t add else your Pav or Bread would be firm not soft.
Now your dough would be smooth but still sticky. Place it on a lightly oiled bowl. Cover this dough with damp cloth Or Wrap in plastic paper.
Keep it aside in a humid place until the dough gets doubled. Roughly about 30 mins.
Once it gets doubles knead the dough on a floored surface. Roll the dough into square shape. Keep width about an inch.
Using a knife cut into square shape.
Roll it into balls with your hands. You can make round oval shape or you can slightly flatten it with your palms.
Now keep these small balls into your greased baking tray. Keep a gap of 5 cms amongst each other. Keep again in a humid place for about 30 mins until gets doubled. Even if its not perfectly round its okay.
Bake for 180°C for about 10 to 15 mins. Once the pavs become brown in color its baked. Let it cool down for sometime before eating. These small buns will look very beautiful. You could just pull one bun from the other easily.
Serve your buns with Bhaji, Curry, Sandwiches or Butter- Jam.

Tip:
- Use fresh yeast for any Bread. If it is not getting frothy in a few mins when mixed with water. It means the yeast is not active.
- You could use oats, Raag Flouri, Cornflour etc to make your buns more fibrous and healthy.

Wanted to know if laadi pav can be baked in a microwave convection oven.I have followed every step of this recipe from the ingredients to the baking temperature but somehow it does not turn out cooked and soft,they always turn black or remain uncooked! 🙁
I am assuming that a oven and a microwave convection oven functions differently..It could be of great help if you could guide me please.

Thanks Divya 🙂 I make laadi pavs in my convection mode in my oven. They bake wonderfully……. fail to understand why it doesn’t happen son in your oven? May be your oven functions in a different way ……… can you try baking in an OTG if its there at your place?

You could glaze the buns before baking with egg whites Or butter. Also once your buns are baked just glaze with some more butter.
