Apple Jalebi – Apple Fritter

Apple Jalebis are fritters soaked in rosy fragrant syrup! Apple Jalebi  are yum, crispy and delicious 🙂 ….. The thought of dipping fruit into batter frying them and soaking into sweet syrup really excites me. I had made Apple Jalebi  for my friend Shampoo I was suppose to visit his house with my mom. So I thought of making Apple Rabdi and Apple Jalebi for him. I was satisfied as he really relished and ate them all.

Apple Jalebi recipe has been lying in my drafts for 2 months now. Guess when I was single ;). Wonder what took so long to post this recipe. Sometimes I wonder there are so much stuff lying in our mail drafts, office mail drafts and other drafts.

Post marriage I have been missing my parents and pet a lot. Soon I will go and meet them. I am very attached to my pet and so is she. Just wanna go and hug her back. Also stay with my parents a few days. Waiting for that moment.

Anyways lemme not make you emotional let’s de stress ourselves with cooking Apple Jalebis! the best part is you can eat these Apple Jalebi  as warm Or chilled.

Total Time: 40 mins

Serves: 7 to 8 people

Ingredients:

  1. 15 to 16 apple rings (apple sliced into thin wafers remove the seeds)
  2. 1/2 cup refined flour (maida)
  3. 1/2 cup wheat flour
  4. 1/2 cup of lukewarm water
  5. 1/2 tbsp dry active yeast Or 1 tbsp fresh yeast
  6. 2 tbsp ghee
  7. 1 tbsp brown sugar / sugar
  8. 1.5 cup oil for frying
  9. 1 tbsp milk masala powder
  10. 1 tbsp vanilla powder
  11. 8 to 10 crushed cashew nuts
  12. a pinch of salt
For Sugar Syrup:
  1. 1 cup brown sugar / sugar
  2. 2 to 3 saffron strands
  3. 1/2 cup milk
  4. 4 to 5 tbsp lukewarm water
  5. 1/2 cup rose petals
  6. 1 t/s cinnamon powder

Method:

Take a mixing bowl. Sift both wheat flour, rice flour, milk masala powder, vanilla powder. Keep this aside.

Apple Jalebi

Mix yeast with lukewarm water. Stir sugar in it. Mix all nicely. Lastly add sugar. Once the yeast is frothy add in the sifted flour. Also add melted ghee. The mixture should be smooth, lump free and thick consistency.

Cover this batter and keep aside. Add more water if required. Keep this aside for 10  mins.

Place oil in a deep frying pan. Dip the apple rings into the above batter.

Deep fry the coated apple rings from both sides until golden brown.

Place the fried fritters on napkins to absorb excess oil.

Now for Sugar Syrup – Boil 4 tbsp water + milk also add sugar. Add the rose petals into it. Dissolve saffron in some hot milk. Now pour this saffron infused milk into the boiling mixture. Once the syrup is bubbling. Switch the gas off.

Lastly dip apple rings into the sugar syrup. Soak for 2 mins. Repeat the same process with all fried apple fritters. Sprinkle cinnamon powder, cashew nuts and garnish with rose petals. Serve warm Or chilled.

Tip:

  • You could use nuts if you wish to
  • If rose petals are not there you could use rose water instead.
  • If milk masala powder isn’t available use milk powder then.

    the apple fritters look so yummy. i am for sure going to make this, but without the sugar syrup as i love cooked apples so much.
