Apple Rabdi is my favorite dish. Rabdi by itself is healthy and Apple with Rabdi is like sone pe suhaga :).… By the way Apple Rabdi is Evaporated Milk Apple Dessert! It’s simplest dish on earth to make. Apple Rabdi tastes awesome my hubby doesn’t has sweet tooth. But he drooled over apple rabdi and was asking me next day to I cutely replied I ate them all ha ha 🙂 I am gonna surely make Apple Rabdi again may be with a different experiment. By the way I have used jaggery in the rabdi to make it more healthy.
Desserts and sweets are my weakness! I am a controlled eater as fortunately I cannot gulp too many sweets. But I can if the sweets , icecream are exceptionally good. Being Indian sweets, mithais, cakes, kheer so on comes naturally to all of us. Most of us love to binge on sweets especially after food and on occasions. There is no harm in eating sugar Or sweets if its a balanced diet. Anyways lemme not bore you with my gyaan.
There were 2 apples lying in my fridge for quite some time. For some reason I used to look at the apples and not eat them. So finally I decided before apples spoil lemme make good use of it. So there comes Apple Rabdi with some nuts and mawa.
Up-till now I have made twice apple Rabdi once with vanilla flavor, second time with cinnamon-cardamom powder. Both the time it tasted yum. Apple Rabdi leaves a good flavor on your mouth palette. It’s quite tempting you could eat hot Or cold. If it’s winter I prefer warm and summer I prefer cold.
Total Time: 25 mins
Serves: 3 people
Ingredients:
- 2 medium sized apples grated with skin Or without skin
- 500 ml Or 1/2 ltr milk (please don’t use low fat Or skimmed milk)
- 4 tbsp grated jaggery Or sugar ( use as per sweetness required
- 1 tbsp vanilla powder Or 1 t/s  cinnamon-cardamom powder
- 6 to 7 raisins (optional)
- 8 to 10 almonds crushed (optional)
- 8 to 10 cashews crushed (optional)
- 4 tbsp grated mawa (optional) – I have used mawa
- a pinch of salt
Method:
Take milk in a wide Or broad bottomed pan. Place on low heat if using sugar add now in the milk. Stir continuously until milk is reduced to half.
Add grated mawa and jaggery if using them now. Keep stirring the mixture. Also add the crushed nuts and salt.
The mixture will start getting thicker. It’s time to add the grated apples to the milk. Add vanilla powder Or cinnamon-cardamom powder and raisins. Give one boil and remove from gas.
Tip:
- If you keep apples boiling with milk for  along time. There are chances your milk might turn sour and start cuddling.
- If your apples are very sweet you could add less jaggery Or sugar. Best thing is taste your rabdi if you need more sweeter add a dash of jaggery Or sugar.
- Raisins are optional I like raisins hence added them.
- Nuts give a nice nutty and crunchy flavor.
- Mawa (evaporated milk) adds richness and flavor to the rabdi. You can skip if mawa isn’t available.
- You can also add dudh masala (milk masala) powder to it.

I prepared this Rabdi..bt milk started curdling..can we eat this..

Teena, there is no issue eating the curdled milk as paneer is a formation of curdled milk.
