Want to eat something instant and quick than make this Aromatic Indian Rice!…… Indian Rice with Vegetables has got Indian aromatic spices, lots of veggies, rice and mung dal. So its complete with nutirents, protiens and carbs. Indian Rice with Vegetables recipe turned out to be a great hit as made by mom. It was damn tasty as I have started eating less of rice but this Indian Rice with Vegetables I just couldn’t stop. I took double times no boasting but scrumptiou meal and mouthwatering. I just loved this mushy mushy Indian Rice with Vegetables 🙂 Thankyou mummy!

Indian Rice with Vegetables

I hope my mom doesn’t cook such dishes everyday else I am gonna grow fat lol…. Hmmm, I am still feeling tempted to eat whilst I am writing here and awaiting for my wholesome goodness for dinner. I am happy to share some more secrets of my mom to all of you.

 

From last 2 days whatever I am baking or cooking is turning into a disaster. Hence, I took a small break. Guess my experiment didn’t work this time while cooking. Nevertheless, that won’t stop me from creating fusion and flavors. After all, that is my blog a result of fusion.

 

Well, we have utilized all veggies we had in our fridge. Veggies like aubergines, carrots, peas, cauliflower, beans that make a lot of veggies. Our stock of veggies, spices and groceries are on the verge of a red line. I meant almost getting over so soon it will be grocery shopping for us.

Gone are the days when we used to go to buy groceries from a local Kirana shop. Nowadays we all love to go to a sophisticated store where we get everything under one roof+ Ac comes free of cost. Hmmmm technology and development have changed so many things including our preferences and  lifestyle.

If you ask me I can just go on an on with my talks. I find my talks interesting don’t know if you guys will like it Or not….. so don’t wanna bore you more. let’s quickly share this recipe with all of you.

Let’s make Aromatic Indian Rice recipe step by step:

  1. Take boiled rice which you must have made earlier day or today. Keep it aside. I don’t have a pic for this one.

2. Chop all veggies and keep ready.

3. Slit brinjals cross wise on the top.

4. Soak mung dal in water for about 15 to 20 mins.

5. Take a big heavy bottomed sauce pan Or wok. Add ghee Or oil keep on low heat mode. Once the oil is hot add cashews.

6. Saute cashews until light brown in color. Now add curry leaves, bay leaves and onion juliennes. Saute for 2 mins Or until onion becomes light brown in color.

7. Add chilies, ginger and garlic. Saute for 2 mins more. Also, add asafoetida.

8. It’s time to add chopped tomatoes.

9. Put turmeric, red chili powder, dhaniya powder, ambadi masala and garam masala. Mix all well.

10. Once everything blends well. Add all chopped veggies like the cauliflower, carrots, french beans, green peas and brinjals.

11. Also, add soaked mung dal. Combine everything well.

12. Squeeze lime juice along with salt for seasoning.

13. Add water and hot milk.

14. Let this simmer and cover it with a lid. Pour some water on the lid.

15. Keep stirring in between and let it cook for 15 mins Or until vegetables are tender.

16. Finally, add boiled rice and incorporate all. Once all are mixed well remove from fire.

17. Your Indian Rice with veggies are ready.

Garnish with chopped coriander leaves.

Serve hot on a platter with raita, papad and pickle

  • ½ cup mung dal soaked in water for 15 to 20 mins (split yellow mung beans)
  • 300 gms boiled Or steamed rice
  • 3 tbsp Ghee Or Butter Or Olive Oil
  • 10 to 12 cashew nuts
  • 4 to 5 small brinjals just slit crosswise from top
  • 1 tomato chopped
  • 10 to 12 cauliflower florets
  • 4 to 5 french beans chopped
  • 1 carrot chopped
  • ½ cup green peas
  • 1 onion chopped
  • 1.5 tbsp cumin seeds
  • 8 to 10 curry leaves
  • ½ cup coriander leaves
  • 1.5 inch ginger juliennes
  • 6 to 7 garlic chopped
  • 1 green chili chopped
  • ½ lime juice
  • 1 t/s turmeric (haldi)
  • ½ t/s asofoetida (hing)
  • 1 tbsp coriander seed powder (dhaniya)
  • 1 tbsp garam masala powder
  • 1 tbsp ambadi masala powder
  • 1 tbsp red chilli powder
  • ½ cup water
  • 1 cup hot milk
  • salt as per taste
How to make the recipe?

Notes
1. If you are using butter add little oil as butter gets burnt faster.
2. You could add more hot milk Or water if you want your rice mushy just like me.
3. Also, you could add veggies of your choice like potatoes, yam, mushrooms, beans, cabbage, spring onion, bell pepper, soyabean.
