Baked Jacket Potatoes – Baked Jacket Potatoes with Oats Recipe

Potatoes and healthy? To eat potatoes Or not? Should I try these Baked Jacket Potatoes? Well if you bake them and mix them with veggies it becomes healthy and delicious. So here I am sharing this Baked Jacket Potatoes stuffed with oats, carrots, peas, milk, and cheese. Doesn’t this Baked Jacket Potatoes sounds healthy and nutritious. These Baked Jacket Potatoes specially made for my hubby so that he can have oats, carrots and some fiber in his diet. I just don’t tell him what’s there in the dish. Just try to make them tasty so that we all can eat and enjoy 🙂

Baked Jacket Potatoes

Baked Jacket Potatoes are very easy to make. Even bachelors can make them easily. For calorie conscious people its good too. I have added cheese you could skip cheese instead add cottage cheese. This recipe is great for kids party as it looks quite tempting and appealing ;)….. Also most important they won’t know what they are eating and include fiber and nutrition in their daily diet. I am looking forward to making some more Baked Jacket Potatoes with different stuffing and veggies.


MY hubby loved them, my neighbours loved them and my hubby’s office mate relished them. I too liked them a lot. It’s a quickie snack and not much of fuss. Next time when I have guests at home I will make them as a side starter both kids and adults will love them.

 

It’s getting quite hot here in Pune. So we are binging on a lot of fruits, yogurt, light food and water. Else we will get dehydrated and suffer indigestion problems. Because of summer, I am soon coming with light recipes like Mushroom Potato Indian Recipe and Chocolate Lassi (Yogurt) 😉

Baked Jacket Potatoes

Let’s make Baked Jacket Potatoes Recipe step by step:

  1. Grease the baking tray with butter Or ghee. Preheat oven at 180 °C exactly ten mins before baking.Firstly wash potatoes under running tap water. Take a microwave dish add some water to it so it covers the potatoes up to the center.  Add salt and microwave for 15 mins. The potatoes should be tender and cooked. If it’s not cooked microwave for some more time. I don’t have a pic for this one.

2. When your potatoes are cooking let’s make its stuffing ready. Combine hot boiling milk with oats and green peas. Keep it aside for 5 mins.

3. Now add grated carrot, all powdered spices. Mix all of them nicely.

4. It’s time to add cottage cheese. Nicely mix with a spoon.

5. Also add the scooped potatoes in the above mixture. Combine all nicely.

6. In the meanwhile remove the cooked potatoes from the microwave. Once it cools down, cut the potatoes from center lengthwise. Now scoop out the potatoes with a spoon leaving the edges firm. You can check out in the pic below.

7. Brush the potatoes inside and outside with clarified butter.

8. With the help of spoon fill the scooped potatoes with the stuffing. Try to fill as much as you can be gentle else the potatoes might break.

9. Spread grated cheese on all stuffed potatoes. Sprinkle some dried basil leaves on top of them.Bake them at 180 °C for 20 to 25 mins. Serve hot with green chutney Or tomato-chili sauce with a hot cup of tea.

  • 6 large Or medium sized potatoes
  • ½ cup boiling hot milk
  • ½ cup green peas ( I used raw ones)
  • 4 tbsp heaped oats ( I used instant oats)
  • 1 grated carrot
  • 100 gms paneer (cottage cheese)
  • 2 tbsp black pepper powder
  • 1 tbsp cumin seed powder
  • ½ tbsp coriander seed powder
  • 1 tbsp chat masala
  • black salt as per taste
  • 2 tbsp ghee (clarified butter) Or butter
  • 2 tbsp dried basil leaves
  • ½ cup grated cheese

Notes
1. You can choose your choice of stuffing like french beans, baked beans etc.
2. Nonvegetarian can choose boiled chicken, ham, salami Or prawns for their topping.
