Eggless Baked Mocha Cheese cake with Frosting – made for a kids birthday turned out yum, soft, delicious and amazing cake. This is a baked version of cheese cake.

I made cream cheese at home as per her instructions. The cream cheese made at home is creamy, fresh and best part is you can store them in fridge and use them when you want to.
This makes me very happy as buying cream cheese in India is an expensive affair. Making cream cheese home is economical and make them at your convenience and how much you want to. I can start making a variety of cheesecakes as the thought of buying cream cheese won’t haunt me anymore 😉 The birthday kid and his family loved the taste and frosting of cake.
Most cheesecakes are made with eggs and if you want an eggless version. Either you got to add gelatin Or agar agar (china grass) for a cold version of cheesecakes. I wanted a baked version without eggs so made use of flaxseed. Flaxseed is rich in omega acid and great for our health. Plus it gives the extra boost to the cake. It’s one of the best replacement for egg in cake. Soon I am gonna try more version of baked and nonbaked cheesecakes. I love blueberry, blackberry Or mixed berries cheesecakes.
Let’s make Mocha Cheese Cake step by step:
- Preheat oven at 190 C exactly ten mins before baking. Grease the baking pan with butter Or oil. Dust some flour on it. Grate the Lemon Zest and squeeze it’s juice. Keep aside. Also mix coffee with hot water along with cocoa powder
2. Roast flaxseed on a pan for 2 mins. Now grind them into a processor until fine powder is formed. Add 6 tbsp water and keep aside. Cream margarine and sugar until light and fluffy.
3. Add the flaxseed powder mixed with water. Beat until the mixture blends nicely.
4. Sift flour, salt, baking powder and corn flour into another bowl. Add the lemon zest, sifted flour into batches of three. Alternatively add soft cream cheese to it. Beat gradually.
5. Beat until the mixture is smooth, uniform and lump free. Now divide the mixture into equal proportion. Add dark chocochip, coffee mixed with warm water and cocoa powder to one mixture. Fold the mixure with a spatula.
6. Put white chocochips, milk powder to the other half. Fold nicely with a spatula.
7. Pour white batter on the greased pan first. Then add the dark batter. Make swirls on teh top with help of fork. You could also add a spoonful of each batter alternatively in the pan. Swirl with a fork on top to give a marbled effect.
8. Bake in a preheated oven at 190 C for 30 mins Or until skewer comes out clean. Allow the cake to cool down.
Let’s make the soaking syrup:
Mix lime juice with icing sugar. Beat them until it forms a thick syrup. Once the cake cools down. Unmould the cake gently.
Spread the syrup over it. Allow to cool you could chill the cake in the fridge for 30 mins.
For Icing: (Don’t have pics for this)
Take about 100 gms whipped cream mix. Melt dark chocolate over double boiler. Combine both of them with beater. Ensure melted chocolate is at room temperature while mixing with whipped dream.
Spread this mixture all over the cake. Chill for an hour
Now take 100 gms whipped cream. Pipe the cream on the edges of cake. Decorate with cherries and almond flakes.
Tip:
- You could use 2 eggs instead of flaxseed.
- Please don’t overbake this cake.
- Icing is optional.
- Instead of lemon you could use orange.

- a pinch of salt

- 3 lemon juice

- For Icing:
- 2 tbsp jam
- 200 gms whipped cream (100 gms mix with chocolates rest 100 gms for piping)
- 100 gms icing sugar
- 50 gms dark chocolate chunks melted into a doubleboiler
- some cherries
- ½ cupa almond flakes

Thanks Suhani 🙂 red velvet cake is also on my agenda but I will take some time to make them. You could buy creamcheese from outside. The recipe to make home creamcheese is boil milk. Once it reaches its boiling point switch off the gas. Take citric acid Or lime juice and mix in 1/2 cup warm water. Now mix this into the hot boiled milk. Allow to stand for 3 to 4 mins until milk curdles on it’s own. Take a muslin cloth and strain the mixture. Blend the drained milk solids in a processor until smooth and creamy. You can store this in fridge and use when you want them to. It’s just similar to making Paneer (cottage cheese) at home but you don’t keep any heavy weight Or for long hours. You just blend the pulp that’s the major difference.
Also creamcheese is made from milk so it won’t be vegan recipe. Some of the snacks Or refreshment you can make for your party are just below.
