Colorful Apple Muffins-Eggless Apple Muffins

My first take on apples that too Eggless Apple Muffins …Hmmm Yummy moist and healthy are these Eggless Apple Muffins! I was about to go to a short weekend to pune to spend time with my closepals hence made these lovely Eggless Apple Muffins which they liked very much and turned out to be nice. I just changed the looks of the Eggless Apple Muffins by frosting with creamcheese and colorful so that it looks tempting 🙂

Also I am a big fan of dryfruits so added my favorite roasted almonds for some crunch in the cake. How can I not add cinnamon where there are apples there is cinnamon. Made for each other couple 🙂

Eggless Apple Muffins

This Muffins are easy to make even bachelors can make them. One of the most simplest yet healthiest recipe to make. Although I have used butter you can use olive oil to cut down on calorie part. Sometimes I just forget calories and eat what I want to. As its necessary to be unhealthy and stressfree at time.

Eggless Apple Muffins

I have chosen colorful candies and butterscotch nuts for decoration. You could use sliced apples over the frosting. Its entirely upto you you can eat the muffins without frosting too. But honestly creamcheese with apple muffins tastes awesome.

Total Time: 1 hour

Serves: 12 people

Ingredients:

  1. 1 cup wheat flour
  2. 1 cup refined flour
  3. 3 tbsp cornflour
  4. 1 tbsp flaxseed + 3 tbsp water
  5. 2 t/s baking powder
  6. 1 t/s salt
  7. 20 to 25 almonds
  8. 1 apple chopped into cubes
  9. 1.5 cup brown sugar
  10. 100 gms butter Or olive oil
  11. 1 tbsp cinnamon powder
  12. 3 tbsp milk
Frosting :
  1. 5 tbsp cream cheese
  2. 2 tbsp butter
Method:

Preheat oven at 180°C ten minutes before baking. Grease generously butter on muffins Or desired pans.

Sift wheat flour, refined flour, corn flour, salt and baking powder.

Roast almonds into 2 tbsp butter and keep aside.

Eggless Apple Muffins

Grind flaxseed with water and keep aside. Take a mixing bowl beat sugar and butter with a beater. Keep beating until it combines together roughly around 5 mins.

Now add flaxseed paste, jam, milk and beat for 3 to 4 mins on medium speed with a beater. Beat until all combine well.

Its time to add roasted almonds and mix well.

Lastly add apple cubes and cinnamon powder just combine batter gently.

Pour the batter into the greased moulds.

Bake at 180°C for about 40 mins Or until skewer comes out clean.

Just unmould the cake after ten mins. Combine cream cheese and butter in a microwave bowl.

Microwave on high power for about 30 sec. Spread the frosting all over the cake. Refrigerate the cake for 3 hours. Now slice and serve chilled.

Tip:

  • You could use 3 eggs instead of flaxseeds.
  • Also pecans can be used instead of almonds.

      Nisha about 1tbsp flaxseed with 3 tbsp water. Cream Cheese is available in Dorabjees in Pune. Hope this helps you.

    These look divine! Eggless recipes are so few and far between. It is interesting that eggs are interchangeable with the flaxseeds. Love the colorful topping-Yum!
