Craisins Coconut Icecream

I was thinking from a long while to make Craisins Icecream. Also I wanted to create a unique flavor. So I clubbed Craisins+Coconut Milk=Craisins Ice cream. This Craisins Icecream is delicious, simple to make, nut free, egg free, vegan and has great health benefits. What more can you ask for :). This Craisins Icecream is a must try and you make them once. You will keep making them. My family including my pet loved this Craisins Icecream! It got over as soon as it was made (: phew.

Craisins Coconut Icecream

Craisins gives a nice tangy flavor to the ice cream. Coconut milk gives soft texture and exotic flavor. Also I have added 1/2 cup Apple juice for some fruit punch in this Craisins Icecream.

The Craisins Icecream is very simple even kids can make them without getting hassled. I am gonna make some more Craisins Icecream, cakes but with different twists and flavors. I just love to experiment with food.

Craisins Icecream

Total Time: 15 mins (3 hour for firming in freezer)

Serves: 5 to 6 People unless all are Icecream freakouts like me

Ingredients:

  • 1/2 Fresh Coconut Grated Or 2.5 cups  of Fresh Coconut Milk
  • 1/2 cup Craisins
  • 1/2 cup Apple Juice
  • 4 tbsp Sweetened Milk
  • 1/2 cup Sugar Or as sweetness required
  • 1/2 cup water

Method:

Take apple juice, water and craisins in a pan. Keep the gas on low mode. Add sugar and cover this mixture with a lid. Let this cook for 5 to 6 mins.

Now add sweetened milk and stir with the above mixture. Switch off the gas and keep this mixture to cool down.

In the meanwhile we will grate fresh coconut. Now place this grated coconut in the grinder with 5 tbsp water.

Grind to form a smooth paste. Strain this mixture with your hand to remove thick coconut milk. Squeeze the coconut pulp with your hand to extract the milk. Keep this thick coconut milk aside. If you are using readymade coconut milk you can just use them directly.

Now combine apple-craisins mixture with thick coconut milk. Combine them well with a spoon. Add this batter into the icecream mould. Refrigerate into the freezer for 3 hours Or until firm.

Once firm your Craisins Icecream is ready.

Scoop out with an icecream scoop or spoon.

Serve chilled and top with choco chips or shavings of chocolate. You can also decorate with some Hersheys Chocolate syrup Or with some nuts.

Tip:

  1. You can make this same ice cream with cranberries, strawberries or any other berries.
  2. Also you can add nuts if you wish to.

    Hey Maria,

    Was out of action for some time due to hectic work schedule…. Cranberry, incidentally, is one of my favourites too……

    Thanks for this lovely recipe………

    Tried the icecream with a bit of difference…. I substituted some cream and some whipped cream instead of water. And did not boil the creams… I just beat the both the creams (fresh cream and whipped cream) nicely with coconut milk (by the way, I used coconut cream instead of coconut milk) and added the cranberry mixture into the same.

    Another tip which you may try – Blend the mixture (after mixing creams and cramberry misture) in a blender… The colour changes into a lovely one and you would be able to get the cranberry pieces in every scoop to take into your mouth…….. Further, the blending adds to improve the texture of the icecream as well… And I served it with the strawberry preserve that I had made…….

    I would love you to make this icecream with my variation and let us know your comments on the same….

    Will have to take time to try our other recipes also………..

      Great Manoj you tried a different version 🙂 altogether however I haven’t boiled any cream if you check my post. Your second tip is also nice thanks for sharing them! Surely try your version …….. take care 🙂
