Easy Vanilla Butter Cake Icing

I was thinking from a long time to make a Vanilla Butter Cake Icing! Guess was waiting for an occasion. At last I made this Vanilla Butter Cake with Double Chocolate Icing. There is a small girls birthday in our building. So I decided to gift this tempting Vanilla Butter Cake Icing. To be honest the Vanilla Butter Cake looked soft, smooth, tempting. But if you ask me the taste didn’t get a chance. Because only once the girl does the cake cutting ceremony not only me everyone will taste them. So I am waiting for that moment. Till than I am happy to share this Vanilla Butter Cake Icing post with all of you.

Vanilla Butter Cake Icing

Guess I am a big chocoholic whatever happens can’t keep away form chocolates for a long time. I have been posting too many chocolates dessert on my blog off late. Hmmmm will have to do something spicy on the next post 😉

Vanilla flavor is my favorite. I love to experiment with vanilla. Till date have made vanilla cookies, vanilla icecream, eggless vanilla cake, vanilla mango pudding and so on. Will keep coming up with more innovations of vanilla recipes. So keep glued for my next post!

Let me not kill your curiosity… quickly move towards the recipe praying the baby girl likes the cake 🙂

Total Time: 30 mins baking+12 mins making+5 mins frosting=47

Serves: 10 t0 12 people

Ingredients:

  1. 6 tbsp vanilla powder
  2. 2 tbsp vanilla essence
  3. 1 egg
  4. 7 tbsp yogurt mixed with 3 tbsp water
  5. 325 gms flour ( I have used half refined and half wheat flour)
  6. 125 gms butter/coconut oil at room temperature
  7. 6 tbsp milk
  8. 3 tbsp cranberry juice
  9. 2 t/s baking powder
  10. 2 tbsp corn flour
  11. 1 t/s salt
For Icing:
  1. 200 gms dark chocolate chunks
  2. 100 gms butter/coconut oil
  3. 50 gms icing sugar/sugar/brown sugar

Method:

Preheat oven at 180°C exactly ten mins before baking. Grease the pan all over with butter Or olive oil. Place a parchment paper at the bottom.

Sift all dry ingredients into another bowl (flour, salt, baking powder, corn flour).

Vanilla Butter Cake Icing

Take hot boiling water and place a bowl Or tin which fits nicely on it. Alternatively you could double boil. Ensure water doesn’t enters the tin. Combine butter, vanilla powder. Beat all with a beater nicely until all incorporates.

Now add egg and beat nicely with a beater Or else egg will start cooking. Beat for 3 to 4 mins on high speed. Remove from fire. Beat the mixture until they blend well.

Mix dry with wet ingredients. Alternatively add yogurt mixed with water and cranberry juice. Once the mixture is nicely mixed.

Pour the batter on the greased pan. Bake at 180°C for about 30 to 35 mins Or until skewer almost comes out clean. Ensure you don’t overbake the cake.

Allow the cake to cool down for 15 mins. Gently unmould the cake.

Pierce the cake all over with a fork. Place the vanilla cake on the platter. Keep in the fridge post its cooled down. In the meanwhile we will prepare its icing.

Combine chocolate chunks, icing sugar and butter/olive oil in a microwave bowl. Microwave on high power for a minute Or double boil on low fire. Remove from oven Or fire. Stir with a beater nicely. Ensure the batter is smooth and without lumps.

Ideally this batter should be thick. Spread the batter on all sides of the cake with a knife Or spatula. Scrape the mixture and pour on the top.

Keep this mixture in the fridge. Once the cake is chilled the icing will be firm and thick. Now pour the rest of icing if remaining. Drizzle chocolate sauce all over.

Top with white chocolate and dark chocolate shavings Or cherries.

Tip:

  • You could skip icing if you don’t wish to. However chocolate icing with vanilla butter cake goes very well.
  • You could sprinkle toasted nuts for toppings Or top with a dollop of icecream.
  • Adding lemon zest Or orange zest would be a great idea.
  • You could replace butter with olive oil for low fat.

    Hi Maria,

    After a long time. I want to know what is Vanilla powder, and where do you get it. Is it the same like Vanilla Essence. Pls write as I want to try it out. It looks yum.

      Hey Vanessa 🙂 vanilla powder are of 2 kinds mainly one is original which is brown in color and the other is synthetic which is white in color. Pure vanilla powder is available at all shops dealing with cake products. You get them in crawford market Mumbai and In IC colony Borivali West. The synthetic vanilla powder I had picked up from Panchgani…… What essence you get in India isn’t a pure one compared to what you get abroad. Hope this helps you 🙂

    How are you, I tried this for my hubb’s bday as I was tempted with this cake more and I used cho. chips. which turned out extremely yummylicious, all your readers should try this recipe. Its damn good. Believe me and Maria, my hubb’s bday went into the disaster, as we were going out for dinner, god showered his water blessings on me and I was like UGGGGGGGGGGG????????, so I am celebrating tomorrow with loads of friends, and again I am going to make this cake.

    Thanks for your wishes also and one request I want to make is the recipe of Palak Paneer and Matar Paneer. PLssssssssssssssssssssss

    This cake does have some wonderful ingredients-like the cranberry juice and yogurt in there. Also, the icing with the chocolate glaze is a great way to top it off. I will take at least two pieces for myself! Well done.
