Eggless Craisins Cake

I am back from my vacation and my close friend gave me these lovely craisins. The equation would be Raisins+Cranberry=Craisins. I had already decide to make an Eggless Craisins Cake. This Eggless Craisins Cake is fluffy, moist, tasty and rises beautifully. Moreover the Craisins look so divine and pretty on these Eggless Craisins Cake just like studded jewels. Hmmm……………….. yummy Eggless Craisins Cake its a must try!

From last 12 days I have been visiting to places never been before. Hold on places like water resort, snake park. I felt rejuvenated and had unwind myself with this awesome trip. As soon as I came home I made this lovely Egg less Craisins Cake. My entire family including my pet had this lovely Eggless Craisins Cake with a cup of tea.

Egg less Craisins Cake

Its quite simple to make also not lot of ingredients are required. If you wish you can replace with eggs. I have used flax seeds to replace eggs. The cake has a good texture also good volume that too without eggs.

Egg less Craisins Cake

Total Time: 1 hour

Serves: 5 to 6 People

Ingredients:

  • 1/2 cup Wheat Flour
  • 1/2 cup Refined Flour
  • 1/2 cup Icing Sugar
  • 2 tbsp Flax seeds+6 tbsp Water Or 2 Eggs
  • 3 tbsp Condensed Milk
  • 3 tbsp Honey Or Golden Syrup
  • 2 t/s Baking Powder
  • 1 t/s Salt
  • 1 tbsp Corn Flour
  • 2 tbsp Milk
  • 8 tbsp Butter Or Olive Oil
  • 1 tbsp Vanilla Essence
  • 4 tbsp Craisins
  • 4 tbsp Walnuts

Method:

For Flaxseed Paste: Grind 2 tbsp Flaxseed with 6 tbsp water until smooth paste is formed.

Preheat the oven at 180° C. Take a loaf pan or any shape you desire. Grease the pan with butter or olive oil. Dust some flour on it.

Sift wheat flour, refined flour, icing sugar, corn flour, salt and baking powder. Keep this aside.

Take butter at room temperature along with milk. Beat the butter for a minute on high speed with a beater.

Now add flaxseed paste and beat for about 3 to 4 mins on medium speed. Combine honey, condensed milk in this mixture.

Now mix dry ingredients with wet ingredients slowly with spoon or spatula. Lastly add vanilla essence, walnuts, craisins. Pour this batter into the greased pan.

Bake for 40 mins Or once the skewer comes out clean.

Tip:

  1. If using eggs. Beat them first until fluffy and add the rest of wet ingredients. Follow the same guidelines.
  2. You can add apple juice or wine instead of milk. This will give a different flavor to this cake.
  3. Please don’t over bake unless you want a rigid and firm cake.

    Your cake looks tempting..want to try it. Had a question.. can i substitute condensed milk with sugar and milk??

    Maria,

    I tried this cake as well… But with egg instead of flaxseeds……..

    Let me know the reason why wheat flour was also added instead of 100% refined flour… Any specific reason for the same ????

    I added only refined flour for the cake……… I felt that the outcome was a little bit dry and not very moist as it should have been……. However, i soaked the cake in cranberry juice mixed with Kahlua (liqueur) and the cake became very very moist…. Served with cherries and whipped cream….. My guests loved it……….

    How did you feel about the dryness of the cake……… I have to make it once again and substitute the ingredients (olive oil to butter and icing sugar to castor sugar) measurements a bit to make it more moist…..

    Your suggestions please………..

      Hi Manoj,

      Wheat flour is fiber hence to make it more healthier wheat flour. Also depend how many eggs you used. Great you made your own version.
      Manoj it depends on your oven capacity and temperature too. Sometimes if cake is over baked it tend to get dry. SO we have to be careful while baking. In some oven the it bakes faster and in some slower. SO you need to know your oven behavior. Hope this helps yup.
