Beetroots if consumed daily can make wonders to your overall health. Beet stems or Beet leaves are a very good source of calcium, iron, Vitamins A and C. Beetroots are an excellent source of folic acid.

Beetroots are beneficial for High Blood pressure, Diabetic, Managing cholestrol, healthy bones, digestive system. Beetroots also cures piles and constipation problems.Betacyanin is the pigment that gives beetroot its color, and has powerful antioxidant properties. Also beetroot will increase your blood flow and very good for anemia.

Beetroot Juice if taken daily will revitalize your body and give you sharper strong body and mind. Not only that a beet a day will give you great skin.

Hey but what about people who don’t like beetroots hmmm. Not to worry make them this Beetroot cake. Make them eat this Chocolate Beetroot Cake and don’t tell them about beetroot in it. They won’t even come to know about it. Chocolate Beetroot Cake Recipe is a great way to introduce beetroot in a toddlers diet.

One more specialty about this Chocolate Beetroot Cake Recipe is its eggless.

Chocolate Beetroot Cake Recipe - Eggless Chocolate Cake

Total Time: 50 mins( 30 mins cooking + 20 mins preparation)

Serves – 6 to 7 people

Ingredients:

  • 1 Big sized Beetroot
  • 2 cups Flour( I have taken 1 cup refined flour+1 cup Wheat Flour)
  • 1 cup Icing Sugar ( Take sugar as per sweetness required)
  • 1 t/s Salt
  • 1 tbsp Corn Flour
  • 1/s Baking Powder
  • 2 tbsp Flaxseed / 2 eggs ( I have used flaxseed)
  • 12 tbsp Water
  • 1 tbsp Vanilla Extract / Few drops of Vanilla Essence
  • 2 tbsp Honey
  • 2 tbsp Condensed Milk or you can take as desired
  • 3 to 4 tbsp Cocoa Powder
  • 1 tbsp Coffee
  • 3 tbsp Chocolate Slab
  • 2 tbsp Butter
  • 1 cup vegetable oil or 1/2 cup unsalted butter / margarine( I used 1 cup olive Oil)
  • Almonds (Optional)

Method:

Flaxseed Paste: Take 2tbsp Flaxseed with 6 tbsp water. Grind to form a smooth paste. Keep it aside for 10 mins before using it.

Take a Fresh Beetroot. Peel off the skin grate it and keep aside.

Now take a mixing bowl. Add wheat flour, refined flour,sugar,baking powder,salt,corn flour and sift them. Sift them 3 to 4 times to break lumps if there are any.

Take chocolate slab and pound them with a pestle or mortar. Take a Microwave bowl add butter and the chocolate. Now microwave them on high power for about a minute.

Add melted chocolate, cocoa powder and coffee powder to above mixture and mix well. Add Flaxseed paste into it or eggs. Its time to add Vanilla essence, Honey,Olive Oil. Mix all well.Add grated beetroot into the cake mixture.

Mix all of them properly. Take a greased baking tray and fill 1/3 rd of it. Decorate the bottom with crushed almonds. Once you add the cake batter into the greased tray.

Decorate on top as well with crushed almonds. Bake at 160 degree Centigrade for about 5 to 30 mins. Keep checking as all oven have different capacity and temperature.

Once the cake is nice brown insert toothpick and check. If it comes out clean that means your cake is properly baked.

Serve hot or Chilled as you desire. It tastes yummy both ways.

Tip

  1. When you preserve cakes in refrigerator ensure you keep them covered else it will become firm.
  2. If you feel anytime the consistency of batter is thin. Do add more flour to make it thick. If your batter is too thick than add lukewarm milk to make the consistency proper.

    Thanks a lot for this wonderful recipe!
    Can we use beetroot puree instead of grating it?
    Can we skip adding Chocolate Slab?
    Can we skip maida and use only wheat flour?

      Hi Smrati,

      I have replied you to your email and also replying you here. Firstly apologies for the delay in reply. I am down with fever.
      1. Yes you may use wheat flour.
      2. Yes you may skip adding chocolate bar.
      3. Boiling beetroot can yield more moisture so take care of that part.
      4. Instead of using flax-seed you can use 1/2 cup butter milk. Also just check the consistency of the batter if it’s too dry then add little more butter milk or as required.
