This Eggless Beetroot Carrot Cake is dedicated to my mother as she hates beetroot. She is suffering from anemia and doctor has advised to eat beetroot. Hence I thought of making this special combination cake with carrots and beet both. She has a sweet tooth and loves cakes. Even if she eats a slice of it everyday there is sufficient iron and vitamin going in her body.
She loved this Eggless Beetroot Carrot Cake and just relished it. Since than I make this yummy cake quite often. I generally add less sugar to avoid fat content. I use Brown sugar as its better than Icing sugar. Also I don’t like too sweet cakes so I cut on the sugar part. If you are health conscious you can use skimmed milk and avoid cream and sweetened milk for this recipe. Also you could use fat free sugar.
What you could do is you should always taste the cake batter before pouring on the greased dish. Check the sweetness and add more sugar if required. That’s what I do!

Lets get onto the Eggless Beetroot Carrot Cake Recipe. Its simple even the beginners can make it without being hassled. Also this is eggless cake so you don’t need to srain your hand or beater too much.
Total Time: 1 hour (Preparation time 20 mins + Rest cooking time)
Ingredients:
- 1 1/2 Cup Refined flour
- 1 cup Wheat flour
- 1 bigsized Beetroot
- 2 Carrots
- 1 cup milk
- 2 tbsp Cream
- 1 tbsp Honey
- 1 cup Brown or Icing Sugar
- 3 tbsp Cocoa Powder
- 50 gms Dark Chcolate
- 2 tbsp Sweetened Milk (optional)
- 2 t/s Baking Powder
- 1 t/s salt
- 1 tbsp Cornflour
- 1 cup vegetable oil/ Butter/ Margarine/ Olive oil
- Dry fruits (Optional)
Method:
- Fetch fresh Beetroot and carrots. Peel off their skin and grate them. Combine them together and keep aside.
- Take desired Baking Pan. Grease it well and cover with a parchment paper at the bottom. You could also use baking paper or butter paper.
- Sieve wheat flour, refined flour and cocoa powder together. Add baking powder, salt, sugar, cornflour to it. Mix them well and see there are no lumps in the dry mixture.
- Take microwave bowl put chopped dark chocolate, oil, milk, sweetened milk,cream. Microwave all together on high power for a minute. Combine them well.
- Mix dry ingredients little by little in wet ingredients. Add grated beetroot carrot. Mix all well with a spoon until mixture is dropping consistency.
- Now add dry fruits and mix again. Please don’t overmix.
- Pour the cake batter onto the greased pan. Bake at 170° C for 30 to 40 mins. Please keep checking after 30 mins.
- The best signal about the cake is when it starts giving you fragrance. After 10 mins of fragrance insert a toothpick in the center. If it comes clan that means your cake is baked evenly.
- Remove Eggless Beetroot Carrot Cake and place it on wire rack to cool. Unmould it garnish with chocolate sauce and dryfruits.
- You can eat hot or cool. This Eggless Beetroot Carrot Cake tastes any ways great. I just love it.
Tips:
- If your cake batter is too dry please add little milk to it. If its too thin than add more cake flour to the batter.
- There is no need to add eggs in this recipe also if you wish you can cut more on oil as beetroot makes the cake moist.
- Don’t overbake the cake.

Hi, just baked the cake (my daughter is alergic to eggs). I cut on sugar. It tastes great,, but seems raw in the middle.
Did not have any cocoa, so I put more chocolate, could this be the reason?
What happens if you overbake this cake?

Milie cocoa is dry ingredient and melted chocolate is a wet ingredient hence its become raw in the center. You should have added a dash of more refined flour. If you over bake the cake it will become hard and dense. Hope this information helps you 🙂 take care.

Shayne refined flour is maida (plain flour) which are used for making cakes, biscuits etc and wheat flour is whole wheat flour which are used in India to make chapatis. Hope this helps you.

finally after the first time disaster to make this cake i conquered to make it yesterday and relised that i over baked the cake, the house was wafting with the aroma of this cake maria, believe me too good all you out there should definetely try this cake.
