My creamiest and best ice cream till date is this Eggless Cinnamon Icecream with Roasted almonds. I am in love with this icecream and so happy I made this icecream. My first attempt to make something from cinnamon. After tasting this Cinnamon Icecream I am deeply, madly in love with cinnamon. I was bit skeptical from making cinnamon icecream but I just thought of giving it a try.

Eggless Cinnamon IcecreamSince the cinnamon icecream turned out so well. I have made up my mind to share this recipe with foodfrenzy as cinnamon is their ingredient for this month. By the way cinnamon is great for health, helps in building immunity, great for digestion and also healthy bones.

The moment you taste this icecream it will melt in your mouth and leave fresh aroma which will remain in your memory forever. I am not boasting but this is tried and tested icecream. Also simple ingredients are used in this recipe. Also quite simple to make.

Somehow cinnamon+coffee combination is a lethal combination. I am in love with all C’s be it coffee, cocoa, cinnamon Or chocolates. Also I am proud of myself sometimes its good to be self motivated.

Guess need to stop my madness over icecream. Let me take you towards the recipe !

Let’s make Eggless Cinnamon Icecream step by step:

  1. Firstly take 3 to 4 sticks of cinnamon and grind into a processor.

2. Grind until powder is formed. The aroma will be amazing of freshly pounded cinnamon. Cover it and keep it aside.

3. Now take a frying pan add butter. Saute almonds for 3 to 4 mins on medium mode. You can add more butter if required. Roast the almonds until crisp and golden brown. Keep this also aside.

4. Take a heavy bottomed sauce pan or wok. Add milk, full cream and keep the heat on low mode. Boil for 3 to 4mins than add sugar. Keep stirring as sugar might stick down.

5. Take 5 tbsp water and mix corn flour, custard powder, salt. Mix well until smooth thick paste is formed. Add little water if required. It’s time to add roasted almonds, raisins and chopped dry fig. Mix the paste in the milk. Keep continuous stirring else lumps might form.

6. Now add instant coffee and mix well until well combined.

7. Finally add cinnamon powder.

8. Continuously keep stirring.

9. After 4 to 5 mins  Or once the mixture starts thickening milk will cuddle. Keep stirring for more 4 mins. Now switch off the gas.

10. Let the batter cool down. Once it comes to room temperature add chilled apple juice and candies.

11. Mix well with a spoon Or spatula. Pour the ice cream batter into desired mold. Freeze for 3 hours Or until firm.

12. Scoop the cinnamon icecream and serve chilled. Garnish with nuts Or rose petals. You could also pour chocolate syrup. There is no need for any sauce as the icecream tastes great by itself.

Easy Eggless Cinnamon Icecream With Roasted Almonds.

  • 2 tbsp heaped freshly pounded cinnamon powder
  • 1 tbsp instant coffee powder
  • 20 almonds
  • 500 ml milk
  • 200 gms fresh full cream
  • 2 tbs corn flour
  • 4 tbsp custard powder
  • 4 tbsp candy (optional)
  • 15 to 20 raisins
  • 2 cups brown sugar Or as sweetness required
  • 2 tbsp butter
  • 1 t/s salt
  • 1 chopped dry fig
  • 1 cup chilled apple juice
How to make the recipe?

Notes
1. Vegans could use coconut cream and coconut milk for this icecream.
2. Keep the gas on low mode while boiling milk else you may end up with burnt milk.
3. You could also take lemonade or coke scoop some icecream at the bottom. Pour lemonade and scoop icecream again on the top.

    Cinnamon is good for high cholesterol and almonds are about the healthiest nut you can find! Based on that and no eggs in this ice cream, it is well worth a try. Thanks for posting this frozen goodness! Buzz.
