Eggless Coffee Cranberry Cake

My first take on Coffee Cranberry Cake. This Coffee Cranberry Cake have actually 4C’s …two are revealed two are hidden. Hidden C’s are Cocoa and Chocolate paste :). Coffee Cranberry Cake has filled with vitamins and kiss of good health. Also this Coffee Cranberry Cake has great texture, delicious, enriched with anti oxidants, power packed with vitamins and proteins. DO try this lovely Coffee Cranberry Cake I bet its worth trying once. Also let me tell you this cake is made from dried cranberries!

Coffee Cranberry Cake

I had bought dried cranberries a month back. All this while it was lying in my fridge but ultimately decided to make  something unique with these dried cranberries. Also there were no eggs so decided to make and eggless Coffee Cranberry Cake. Voila my family and my pet loved it.

Cranberries are called as Karwanda in Mumbai-India. However the cranberries which we get in India are quite different than other countries. Cranberries are great for anemia disorders and building immunity. Do include cranberries in your diet frequently 😉

Coffee Cranberry Cake

Total Time: 1 hour 15 mins

Serves: 10 to 12 People

Ingredients:

  • 2 tbsp Flax seeds + 2 tbsp Melon seeds
  • 20-25 Dried Cranberries
  • 1 cup Water
  • 2 cups Refined Flour
  • 1 cup Wheat Flour
  • 1.5 Cups Icing sugar Or as sweetness required
  • 1/2 Cup Olive oil
  • 2 t/s Baking Powder
  • 1 t/s Salt
  • 2 tbsp Corn Flour
  • tbsp Heaped Cocoa Powder
  • 3 t/s Instant Coffee Powder
  • 5 tbsp Chocolate Paste
  • 2 tbsp Strawberry Jam
  • 1/2 cup Raisins
  • 5 tbsp Choco chips
  • 2 tbsp Sunflower seeds
  • 3 tbsp Desiccated Coconut
  • 1/2 Lime Juice

Method:
Preheat the oven at 180°C.  Grease the pan with butter generously and dust some flour on it. Combine flax seeds with melon seeds with 8 tbsp water. Grind until smooth paste is formed.

Take another pan add water. Heat on low flame add dried cranberries with covered lid for about 5 to 6 mins. Switch off the gas and allow the mixture to cool down. Once cooled down grind the cranberries with little water until coarse puree is formed.

Heat a cup water with instant coffee, cocoa powder along with jam. Boil for 4 to 5 mins until all blend well.

Sift refined flour, wheat flour, baking powder, salt and corn flour.

Cream butter and sugar until they mix well.

Add flax seed-melon seed paste in the butter-sugar mixture. Beat well for 4 mins.

Add choco paste and beat well. Also add cocoa – coffee paste.

Now mix dry with wet ingredients slowly. Fold with a spoon or spatula. Combine Raisins, Desiccated Coconut and Lime Juice. Now pour batter into greased pan. Top with choco chips and sun flower seeds.

Bake at 180ºC for about 50-55 mins Or until dark brown and crisp in color.

Tip:

  1. If the cake batter is too thin add little flour and if batter is thick add little water.
  2. You can replace flax seeds and melon seeds with 2 eggs.
  3. Also you can add dry fruits if you wish to.

    Great pics, this looks luscious and elegant. Making a baked good without eggs can be difficult, but the step by step photos and instructions make it look easy. Ha-I have a heart pan too. Buzz

      Hey Tina,

      Great we share same hearts .. heart pans lol. Hmmm Tina making Cake without eggs is not difficult. You just need the right replacement flax seeds, tofu are great replacements. I have never tried tofu would love to experiment with it though some day. Also thanks for your lovely views.
