Eggless Pineapple Cake Recipe

The title Eggless Pineapple Cake Recipe says it all….. Do I need to explain further even if you say no I will still give you more insight.I have always loved Pineapple Cake from Monginis since my childhood. I always wished to make a Pineapple cake. I had a lot of recipes for Pineapple cakes but I wanted to try the one without eggs. I don’t personally like too much frosting as I am health concious. You can make your own frosting if you wish to. But let me tell you this Eggless Pineapple Cake Recipe tastes yummy and delicious on its own. You need not require frosting if you are a genuine cake lover.

Eggless Pineapple Cake Recipe

This Eggless Pineapple Cake can be made from fresh pineapples if available or from tinned pineapples. I have used tinned pineapples.

Eggless Pineapple Cake Recipe

Also this eggless Pineapple cake tastes yummy and awesome. I have made this cake yesterday for Christmas. But its almost over as Mom has distributed cakes already to few relatives in advance. My family loved it they remove and eat this cake.

If you are making this cake for any Birthdays or occasion than please do the frosting for the cake.

This Eggless Pineapple Cake Recipe is very simple and lovely recipe.

Warning: As soon as you make this cake it will get over in jiffy minutes so make it alone!

Lets begin than.

Total time: 2 hours (45 to 50 mins Baking the rest in preparing)

Serves : 12 to 14 people

Ingredients:

  • 2 cups Refined flour
  • 1 cup Wheat Flour
  • 3 t/s Baking Powder
  • 1 tbsp Corn Flour
  • 1 t/s salt
  • 5 Pineapples (Canned or Fresh)
  • 1 cup Pineapple syrup
  • 4 tbsp Condensed or Sweetened Milk
  • 1 cup Milk
  • 4 tbsp Margarine or unsalted Butter
  • 2 tbsp Olive Oil
  • 2 tbsp Cream (Optional)
  • Dry Fruits (Optional) I used Chopped cashew nuts
  • 1 t/s vanilla essence or essence of your choice

Garnishing:

  • 1 cup Pineapple syrup
  • Hersheys Chocolate Syrup or any Chocolate syrup
  • Few Cherries.


Method:
If you are using fresh pineapples you can make their puree. Use this puree in the cake mixture but add at the last stage of mixture of cake. The same way as I have added in this Eggless Pineapple Cake Recipe.
Preheat the oven at 160°C. Grease the baking pan and place a parchment paper or butter paper on the baking tray. You can cut the baking paper as I have cut as per the bottom size of your baking pan.

Fisrtly remove the slices of Pineapples and slice them. Don’t use the syrup or juice just pineapples.

If the pineapples are already crushed you need not slice them. The one I used were round slices of pineapple hence I have sliced them into small pieces. Don’t worry we will also use the Pineapple syrup.

Take a mixing bowl sift refined flour, wheat flour, baking powder, salt and corn flour. Sift them atleast 3 to 4 times .

In another bowl mix condensed milk, milk, essence, 1 cup pineapple syrup, sliced pineapples , olive oil and margarine. Mix them all well with a spoon. I don’t have a pic for this one.
Now slowly add this mixture little by little to the flour and fold it gently with a spoon or spatula. Please don’t use beater for this cake batter.

Use spoon and mix wet ingredients with the dry ones. Once everything is combined well add the chopped dryfruits.

Bake the Eggless Pineapple Cake for about 25 mins at 160°C. Insert a toothpick and check. If it comes clean than your cake is ready.

My cake is slightly overbaked as I got busy making other cake batter. You don’t worry keep checking your cake will be baked appropriately.
For Garnishing the Cake:
Brush the remaining pineapple syrup on the cake. You can use fork and pierce at all corners of cake. Rub the syrup.
Now decorate the cake with Pineapple. Add Chocolate syrup and top it with cherries.

Tips:
  1. Keep checking your cake. Once you get the smell of cake that means its almost done. Keep checking with the toothpick. Most of the times the time given in baking cakes will differ. The reason being all oven sizes,capacity, temperature differs.
  2. Don’t over mix this Eggless Pineapple Cake Recipe else the output won’t be good.
