Flavor Fusion Cheesecake

Another Cheesecake with mixed flavors! Lemme tell you the flavors used for this cheesecake. The cheesecake has Vanilla, Mango Puree and chocolate. You could also call it as Vanilla Mango Cheesecake Or Flavor Fusion Cheesecake. It’s upto you all. I love to keep experimenting hence came out with this unique flavored cake called Vanilla Mango Cheesecake 🙂 ………….My dad loved the flavor of Vanilla Mango Cheesecake.

Vanilla Mango Cheesecake

I have made a lot of cheesecakes that too with unique styles and innovations. I have used mango puree for the cake. However fresh mango cubes would be better. Now mangoes aren’t available in India hence used canned mango puree. For vanilla I have used vanilla powder and essence. Also for chocolate flavor made crust of chocolate biscuits and added dash of choco chips.

To be honest I am trying to cut down on calories for a big event in December. But difficult to keep away from desserts. But I know I am quite stubborn and will shed the extra kilos around my waist. Although I am slim but have a tube shaped body. So if I gain weight it has to be around my tummy. Hmmm lots of diet need to be done.

Anyways there is no harm in eating sweets and desserts in moderation. I don’t believe in starving! Let me not deter you away from Vanilla Mango Cheesecake. As I am expert at drifting topics while talking lol …

Total Time: 30 mins baking 15 mins preparation

Serves: 8 to 10 people

Ingredients:

  1.  100 gms creamcheese
  2. 2 eggs
  3. 1 cup canned/fresh mango puree Or mango cubes
  4. 4 tbsp heaped vanilla powder
  5. 1 t/s salt
  6. 100 gms flour
  7. 1/2 cup sweetened milk Or as sweetness required
  8. 2 tbsp milk
  9. 1 tbsp vanilla essence
  10. 1 tbsp lime juice
  11. 4 tbsp chocochips
  12. 1 t/s salt
For Crust:
  1. 100 gms bourbon Or chocolate biscuits
  2. 2 tbsp olive oil Or butter
  3. 8 to 10 crushed hazelnuts
  4. 8 to 10 crushed walnuts Or pecans

Method:

Preheat oven at 180° C exactly ten minutes before baking. Take a greased pan with a parchment paper at the bottom. Keep all ingredients ready for cake.

Vanilla Mango Cheesecake

First we will prepare the crust. For the crust take digestive Or chocolate biscuits. Grind them into a processor until fine powder.

Vanilla Mango Cheesecake

Combine biscuit powder and olive oil. Mix them with your fingers. Now spread the biscuit butter mixture on the greases pan all over at the bottom. Now spread crushed walnuts and hazelnuts on them.

Bake for 10 to 12 mins at 180° C. Allow to cool down you could also place in refrigerator.

In the meanwhile lets make our filling for cheesecake. Combine creamcheese, milk and sweetened milk in a mixing bowl. Beat for 2 to 3 mins with a beater until all blend well.

Also add egg one by one and beat them. Add vanilla powder, salt and flour. Mix all nicely.

Lastly add mango puree Or mango cubes. Blend well with a beater. Lastly add essence, salt and lime juice. Once the batter is evenly mixed.

Pour the batter into the ready crust pan. On the top sprinkle chocochips.

Bake at 180° C for 30 to 35 mins Or until skewer comes out almost clean.

Once cake cools down unmould the cake gently. Before unmoulding  dust some cocoa powder. Gently unmould the cake. Dust some cocoa powder and icing sugar.

Serve chilled Or hot. Chilled tastes better !

Tip:

  • You could avoid nuts and chocochips.
  • Also you could come out with your own fusion version of cheesecake.
  • I have added less sweetened milk as mango puree was too sweet. So be careful about sweetness before adding sugar Or sweetened milk into the cake.
  • You could cover the cake with foil and keep it under water bath. This process will not burn Or make your cake too much brown. However I was feeling too lazy so I didn’t utilized this process.
