Fougasse Recipe

Fougasse is a flat bread with a leaf shape which is eaten as a bread Or can be used as a base for your pizzas!

Fougasse is known as focaccia in Italy, hogaza in Spain and so on. Fougasse is known with different names, versions in different regions. It depends on your luck which baker makes fougasse of which kind :)… This is my first attempt to make Fougasse Bread. This Fougasse recipe turned out to be great and tasty. My parents including my pet loved this bread. I have modified the recipe and changed the old pictures by new ones.

Fougasse Recipe

Fougasse Recipe is made plain or with olive oil and mixed herbs Or with olives. You can make whichever you wanna make but make them in leaf shape. How to make a leaf shape in your fougasse. It’s quite simple to make. I will explain it to you further not to worry.

To make this Fougasse more healthier. I have combined 2 tbsp Oats+1 tbsp Sesame seeds+1 tbsp Flax seeds in a processor. Grind until fine powder is formed. You can use this powder in soup, lentils, cakes, pizza, bread etc. This healthy powder would make your snack, food more healthier and nutritious.

Also the leaf pattern of fougasse is of great help. Once they are baked you can easily pull apart each slice.

Fougasse Recipe step by step recipe details below:

Firstly mix yeast with 1 cup lukewarm water along with honey or sugar. Keep this in a humid place. I kept in my oven with the light on. Just switch it on thats it. It’s best place to keep your yeast. Check your yeast in about 7 t 8 mins it should get frothy. Also add salt in this mixture after 5 mins. If the yeast isn’t frothy that means it’s no good. Please use fresh yeast otherwise you bread won’t rise.

Sift wheat flour, refined flour in another vessel. Add the dried herbs Or fresh herbs if using.Now add the frothy yeast and mix with your fingers. Use all your stamina to knead a dough. Add olive oil Or butter and knead again.

Roll out into a round dough. The dough would be slightly sticky that’s fine.  Keep this dough in a humid place or in your oven. Drizzle some olive oil and cover it with a damp cloth.

After 30 mins Or once your dough doubles up.

Start kneading the dough again. Now add dried herbs. Knead the dough again and shape this dough into a flat round balls with the help of your hand. Roll into a oval Or round shape with a roller Or hand. Take a greased round cake pan. Now place this round dough into it. Try pressing with your finger and make the dough flatter. Take a knife and give a diagonally shape on left and right side of the dough. Allow to double up again I don’t have a pic for this one.

Ensure you don’t use the knife forcefully. Sprinkle red chili flakes Or oregano if using. Bake at 220°C for about 12 to 14 mins Or once they are baked and brown in color. Wait for your fougasse to cool for about 10 mins. Now unmould them into a serving dish. Sprinkle olive oil and sea salt on them. Serve your fougasse hot accompanied with cheesy dip. You can just eat your Fougasse just like that. It tastes great by itself  Or have it along with a cup of tea…. You could use this bread as a Pizza base.

  • 3 cups refined flour
  • 1 cup wheat flour
  • 1 and ½ tbsp fresh yeast
  • 1 tbsp honey Or sugar
  • 1 tbsp salt
  • 2 tbsp olive oil Or butter (I have used butter)
  • 1 cup lukewarm water Or as required
  • 1 tbsp dried herbs Or fresh herbs like parsley, basil, sage etc chopped finely
  • For toppings: 2 tbsp flaxseed+oats+sesame seeds powder (Optional)
  • 1 tbsp oregano (optional)
  • 2 tbsp olive Oil Or butter (I have used olive oil)
  • 1 tbsp sea salt
  • 1 tbsp red chili flakes(Optional)

Notes
Use good quality of yeast.
Don't get tempted to add more flour while kneading your dough.
You can add olives for variation.
