Gajar Ka Halwa recipe with step by step photos – the word creates hunger pangs in my stomach. Gajar Ka Halwa is one of the hottest selling Indian Dessert. Gajar Ka Halwa just melts in your mouth and tempts you to eat more and more. The best part of this delectable dessert is you can eat them warm Or cold. Gajar are called as carrots in English. Gajar Ka Halwa  is nothing but Carrot Pudding / Dessert. To be honest Gajar Ka Halwa  has a special place in my heart 🙂

Gajar Ka Halwa

Carrots Or gajar are reach in carotene, fiber, vitamins. So do include them in your diet. If you don’t like to consume carrots in the direct form. Make carrot pudding, carrot cake Or some carrot dessert. Atleast this way you are eating carrots right.

I am gulping some gajar ka halwa right away while typing this post. You can imagine how much I can hog on it. There are many variations to make Gajar Ka Halwa. I have chosen the simplest and easiest way for my dessert. As I am impatient when it comes to making desserts.

The only sad part of carrot halwa is to grate carrots. I was actually taking small breaks in between while grating carrots. Otherwise I would have got finger aches (: ….. If you have a processor which grates vegetables than you are lucky.

My hubby is not a dessert lover unlike me. But quite surprising he ate most of Gajar Ka Halwa 😉

Total Time: 35 to 40 mins

Serves: 8 to 9 people

Ingredients:

  1. 7 to 8 large Or medium sized carrots (peeled and grated)
  2. 4 tbsp ghee (clarified butter)
  3. 400 gm sweetened milk (I used Nestle Milkmaid)
  4. 1 t/s cardamom powder
  5. 1/2 cup raisins chopped
  6. 50 gms almond blanched and chopped
  7. 50 gms cashewnuts blanched and chopped
  8. 50 gms pistachios blanched and chopped
  9. 1/2 cup mawa (evaporated milk)
  10. 1 cup milk
  11. a pinch of salt

Method:

Firstly grate all carrot and keep aside.

Gajar Ka Halwa

Soak all nuts in hot water for ten mins. Once they are blanched just pound them coarsely.

Take a heavy bottomed saucepan. Place on low heat add ghee. Once ghee is hot add cardamom powder.

Now add grated carrots. Keep stirring and cover with a lid. Cook the carrots for 10 mins Or until tender. Ensure you keep stirring in between.

Add sweetened milk along with blanched nuts and raisins. Combine all nicely. Cook for 2 to 3 mins with covered lid.

It’s time to add mawa and milk. Stir all nicely. Cover with lid for 2 mins. Now remove the lid and cook until moisture evaporated. Lastly add pinch of salt.

Taste your halwa if you want it more sweet add little sugar. I prefer my halwa not very sweet. Serve warm with a dollop of icecream Or serve chilled.

Tip:

  • You can add any kind of nuts you wish to add in this dessert.
  • Ensure the carrots are properly cooked else you would have Raw Halwa 🙂
  • If you don’t have mawa you could grate some paneer instead.
