Quick Healthy Lauki Sabzi

One more treasure form my moms’s bank that is Lauki Sabzi! What is Lauki Sabzi? Lauki is bottlegourd also known as Dudhi, Lauki in India. This Lauki Sabzi is enriched with coconut milk, mild Indian spices yet tasty, healthy and divine to taste. Off late I am advised by the doctor to eat healthy stuff hence lauki. Moreover this Lauki Sabzi recipe can be eaten as a stew, soup, vegetable Or curry. I actually ate my Lauki Sabzi with roti, rice and also drank some like soup :)…. Also you could name this as Low Fat Lauki Sabzi!

Lauki Sabzi

Bottlegourd is beneficial for health, skin, bones, hair and body. It’s also known to reduce fats in the body. Lauki Juice is great for healthy bones, great for digestion. Its great to eat bottlegourd everyday. If not everyday you could have it at least twice a day ;)… So do include them in your diet.

Lauki Sabzi

Grated bottlegourd pulp is a great replacement for eggs to bake cakes. I have shared a big big secret with everyone. You could get earn money, get all the things in the world but to be fit is crucial to and fitness overshadows all the other factors.

Bachelors, Beginners, children can easily make them. Also its instant and quick dishes on earth to make.

Total Time: 20 mins

Serves: 4 to 5 people

Ingredients:

  • 500 gms lauki (bottlegourd peeled lightly and chopped into medium sized cubes)
  • 3 cups water
  • 1.5 cup thick coconut milk
  • 1/2 coconut / 100 gms  fresh grated coconut
  • 1 tbsp cumin seeds
  • 1 green chili
  • 2 tbsp coconut oil
  • salt as per taste

Method:

Firstly chop lauki lightly peel the skin. Chop into medium sized cubes and immerse them in water.

Lauki Sabzi

Combine fresh grated coconut, cumin seeds, green chili into a processor. Grind until smooth paste is formed. Keep it aside.

Take a big wok Or vessel add water. Keep the heat on medium mode. Allow the water to boil. Once water is boiling add chopped lauki. Let this cook for 10 mins on medium heat.

Add the coconut paste stir all nicely.

Now add coconut milk. Combine all well.

Let this cook for 6 to 7 mins more. Lastly add salt and pour oil. Switch off the gas.

Your Lauki Sabzi is ready. Serve hot along with rotis Or rice.

Tip:

  • You could make same recipe with squash Or pumpkin.
  • If coconut milk is not available replace with yogurt mixed with water Or buttermilk.
  • If you want more spice you could use more green chilies Or for a different spice you could use black pepper.

    Would adding turmeric powder change the taste? I like my food with a little colour.
