Leftover Fruit Cake Recipe

This is my most economic and thoughtful recipe called Leftover Fruit Cake Recipe. That is why I don’t mind calling this as My Budget Recipe :)… This Leftover Fruit Cake Recipe comes with a kiss of good health. Most of the times we have lot of  fruits leftover in Fridge. Its like one apple or few strawberries, one banana Or a similar situation. I thought of making a healthy Leftover Fruit Cake Recipe with all these fruits. Also let me share with you this is one of my most moist, healthy, yum and delicious Leftover Fruit Cake.

To make it more healthier have added a dash of Oats, Flaxseed and  Honey. What more one could ask for. This Leftover Fruit Cake also consist banana, strawberries and 1/2 apple. You could add nuts if you wish to. I have not added nuts though as I didn’t feel the need to add them.

I love playing with baking cakes. Love to use my imagination and experiment with different flavors. Also love to make something unique but healthy and safe. Health is given more importance when I decide on any recipe. As cakes are best way to go through any stomach. Then it doesn’t matter if you have added beet, carrots, oats, zucchini, bottle gourd, fruits or any damn thing. As long a the person you feed doesn’t know what is inside the cake.. ha ha.


Similar case with my mother. She will ensure everyone eats healthy but she won’t. So being her daughter I play smart and feed her one slice of cake. That takes care of her nutrition. Thank God for giving this innovation called baking to humans.

Also prefer making egg less cakes most of the times. As sometimes it is good to be vegetarian if not vegan right? Anyways I am talking too much today. So I will quietly move towards this Leftover Fruit Cake Recipe. Yeah but one thing more this cake is moist and great texture. Leftover Fruit Cake Recip


Total Time: 50 to 55 mins

Serves: 8 to 10 people unless you got cake lovers!

Ingredients:

  • 1 and 1/2 cup Wheat flour
  • 1 tbsp Flaxseed
  • 1/2 cup All Purpose Flour Or Refined Flour
  • 1 Cup Brown Sugar Or Icing Sugar (Quantity as sweetness desired)
  • 1 Banana Mashed
  • 8 to 9 Strawberries chopped
  • 1/2 Apple sliced thin into round shape
  • 2 t/s Baking powder
  • 1 tbsp Corn Flour
  • 1 t/s Salt
  • 3 tbsp Sweetened Milk
  • 1 tbsp Honey
  • 1 cup Oats
  • 1 tbsp Cocoa Powder
  • 1/2 cup Butter at Room Temperature Or 1/2 cup Olive Oil
  • 1/2 cup Milk
  • 1 tbsp Vanilla Extract or Essence (Optional)

Method:

Grease a baking tray any shape desired. Just ensure you leave about 2 inches space for the cake to rise.

Grind flaxseed with water to form a paste.

Sieve all dry ingredients (oats, flour, baking powder, cornflour, salt, sugar, cocoa powder). Combine all of them in a mixing bowl.

Mash Bananas in another bowl. Combine all wet ingredients together except strawberries. Mix milk, butter, condensed milk, bananas, honey, flaxseed paste. Once they incorporate well into each other.

Make a small well in the dry ingredients. Fold wet ingredients little by little. Lastly add chopped strawberries and vanilla extract or essence.

Once they all blend. Your cake batter is ready. Please don’t overmix.

Pour the cake batter in the greased pan. Arrange apple slices at the top. You could also place apple at the bottom of the cake. It is completely your wish.

Bake at 180°C for about 45 mins Or until the skewer come out almost clean.

All oven has different temperature hence keep checking your cake after 40 mins.

Let the cake cool down. Unmould the cake.

You could use your own frosting. I haven’t used any frosting.

Just covered the cake with Hersheys Chocolate Syrup.

Tip:

  1. Don’t over mix or over bake this cake.
  2. You could use any fruit of your choice.
  3. Also if you love eggs. You could replace with a Yolk instead of flaxseed.
  4. Garnish the cake with nuts if you wish to.
  5. Do check the cake consistency if its thin add flour if thick add milk.
