This Litchi Icecream is a frosty delight to everyone’s taste buds 😉 ……. I have used canned litchis as fresh litchis are not available. Nevertheless the Icecream tasted great. I am sure fresh litchis will give a different flavor and taste to it. Litchi Icecream is made only with 6 ingredients. The ingredients are fresh cream, orange juice, brown sugar, vanilla powder and canned sweetened litchi. That’s it no icecream maker Or any tough process required.

I love litchis would love to eat them all around the year. I wish Mumbai was a hill station lols lots of fruits like strawberries, mulberries, raspberries, cranberries, blueberries. In short I would have got to eat all berries 🙂

Litchi Icecream Recipe

A tin of sweetened litchi was lying in my fridge. So I decided to make a delicious dessert with these litchis. So without wasting further time lets make this tasty dessert!

Total Time: 10 mins to make+3 hours for refrigeration

Serves: 10 to 12 people

Ingredients:

  1. 250 ml full cream
  2. 1 cup orange juice (150 ml orange juice)
  3. 4 tbsp vanilla powder (optional)
  4. 1.5 cup brown sugar/castor sugar
  5. 500 ml canned sweetened litchi Or 16 to 18 fresh litchi deseeded
  6. caramelized almonds (optional)+2 tbsp sugar (optional)+2 tbsp butter (optional)

Method:

If using fresh litchis deseed them. Keep them aside. If using canned litchis drain the syrup and utilize the litchis.

Combine litchis, brown sugar, vanilla powder and full cream in a processor. Grind until smooth mixture is formed. If litchis are coarse its fine.

Pour the mixture into desired mould. Set in the freezer until firm. No pics for further steps.

For caramelizing almonds. Crush the almonds first. Take some butter in a pan on low heat. Add sugar once it changes to amber color. Combine the crushed almonds. After 2 to 3 mins the mixture will thicken and solidify. Switch off the gas and keep aside.

If using caramelized nuts add them in the icecream mixture lastly Or you could use them for topping the icecream.

Tip:
  • You could use any fresh fruit’s like black grapes, berries, mangoes, tender coconut etc.
  • Caramelized nuts add a nutty flavor to the icecream. However it’s upto if you would like to add nuts Or not.

    Litchi has been always my fav since my childhood times,when i grew up world presented it in a form of ice-cream & i just loved them.I’m happy to know that i can make it in home.wow! thats great.once my kitchen is done,it will one of the first dish i gonna make it in my kitchen.
