Even a first time beginner can make this Carrot Cake Recipe – Moist Carrot Cake without being tensed.

Moist Carrot Cake - Carrot Cake Recipe

Let me share some of the benefits of Carrot with you. Carrot are healthy and wealthy with carotene, vitamins,minerals,loads of Vitamin A. Carrots great for eyes,skin , consist lots of fibre content which is beneficial for body. Carrot a day will rejuvenate your body everyday!.

I know a lot of my friends don’t like to eat carrot in raw form unlike me. They eat carrots in halwa, mithai etc. There were a dozen carrots in my fridge. I just thought of making the Moist Carrot cake Recipe. It turned out to be great and was over in jiffy minutes.

Do try this Moist Carrot Cake Recipe to reap its benefits and amazing flavor!

Total Time: 1 hour ( 3o mins preparation time rest baking)

Ingredients:

  • 2 Carrots Peeled and Grated
  • 1 egg
  • 1 cup vegetable Oil ( I used Olive oil)
  • 2 tbsp Sweetened Milk
  • 1 cup Icing sugar Or Brown Sugar
  • 1/2 cup Milk
  • 1 cup Wheat flour
  • 1 cup Refined Flour
  • 1 t/s Salt
  • 2 t/s Baking Powder
  • 1 t/s Vanilla Essence
  • 2 tbsp Dessicated Coconut
  • Dry Fruits (Optional)

Method:

Take a Greased Baking Pan. Place a parchment or Butter paper at the bottom of the greased pan. This will help you in unmoulding the cake easily.

Mix all the dry ingredients except Dessicated coconut and sieve them together. Combine salt, flour(wheat and refined), baking powder, icing sugar, salt and keep aside.

Now mix egg in the dry mixture and mix. Now add Olive oil, Sweetened milk, Milk combine them slowly with hand.

Add shredded carrots and dessicated coconut  mix altogether.

Lastly add dryfruits and vanilla essence. Mix gently for the last time until combined well.

Put this batter into the greased pan bake at 170°C for about 25 to 35 mins. Keep checking when the carrot cake starts giving you fragrance.

Once the cake becomes nice brown and toothpick comes out clean from the cake. Yippie your Moist carrot cake is ready to eat.Cool the carrot cake for about 1o mins on the wire rack. Unmould the cake and serve chilled or hot.

Tip:

  1. Don’t overmix this cake and mix with hand not beater.
  2. If you feel the consistency of cake is too thin please add refined flour
  3. If the consistency of cake is too dry or thick please add little milk to it.
  4. Never panic or get sad if your cake doesn’t turn out well. As with practice you will master the art of baking cakes 🙂

    Hi Maria,
    Thanks for the instant reply. One more query is 2 tbsp Sweetened Milk Condensed Milk/Milkmaid.

    Secondly, icing sugar is it powdered sugar or granular sugar. Is it easily available in the market. I am just waiting to try your recipe. It really looks delicious and yuuuuuuuuumy.

      Hey Vanessa,

      You are welcome sweetened milk brands in India are Nestle Milkmaid and Amul Mithai Mate. Infact you can make the entire cake with sweetened condensed milk. There is no need to add sugar is using sweetened milk. Your cake would be more softer if using sweetened milk.

      Icing sugar is easily available for instant Bluebird brand Icing sugar is available in marts. You could use brown sugar, powdered sugar, castor sugar Or milkmaid it’s your choice.
