Mushroom Omelette Recipe happens to be one of my favorite omelettes. Adding cheese to them is awesome. This is a fluffy, soft yet evenly cooked brown omelette. Have vivid memories of having mushroom cheese omelettes with my bpo- team eating at wee hours in a restaurant at Malad-orlem which has closed down now. But enjoyed them having almost every second day we relished them a lot. It’s surprising how we associate certain food with certain memories.

From then I have always made them home and enjoyed with toasted bread and tea. We make various kind of omelettes at home the one to try is frittata with various stuffing’s. I would share you the secret of making fluffy omelettes yet evenly cooked. As generally we always tend to make flat or thin omelettes. But fluffy omelettes takes omelettes to a different level making them look more appealing and tempting 🙂

You could add any veggies if your choice like capsicum, bell peppers, french fries etc. The challenge to add veggies is you would have to saute them or cook them before adding them to omelettes. Adding cheese is optional but cheese plus mushrooms just are just awesome.

For variation I have added some purple cabbage however it’s optional. You could use green chilies for spice or red chili powder or even some dash of crushed black pepper. I have used coriander leaves you could use dried herbs or basil leaves or any herb which goes well with an omelette.  To make the omelette more fluffy I always add some milk that is optional too. You could also add some garlic as they go well with mushrooms.

If you don’t like the egg odor in omelettes like me. Then add a pinch of turmeric or grated ginger this would remove the odor of egg. Try this and you and me both would be free from egg odor. I have shared my secret you share yours 😉

Let’s make step by step Mushroom Cheese Omelettes Recipe:

1. Break the eggs into a mixing bowl.

2. Add red chili powder, salt and turmeric powder.

3. Whisk nicely or beat them with a fork.

4. Add milk and beat again.

5. Heat the pan and melt the butter or heat oil.

6. Saute the mushrooms.

7. Fry  until they are cooked and leave moisture.

8. Now add chopped cabbage and saute for another minute. Drizzle some oil or butter over the sides. Increase the heat.

9. Just spread them on the pan evenly. Pour the beaten egg mixture. Now reduce the heat

10. Spread some coriander leaves and pepper powder on top.

11. Cover the pan and allow the omelette to cook. Flip other side and gently press them with a spatula this would help the omelette to fluff.

12. Once they cook from both sides. Spread the grated cheese or cheese slice all over the omelette.

13. Fold the omelette or flip from one side. Remove once they are browned or cooked from both sides.

14. Serve your mushroom cheese omelette with toasted or grilled bread and a hot cup of tea or coffee.

  • 1 tbsp oil + ½ tbsp butter
  • 2 eggs
  • 4-5 button mushrooms chopped coarsely
  • 1 tsp red chili powder or 1 green chili chopped finely
  • ¼th tsp turmeric powder (optional)
  • 1 tbsp milk
  • ¼th tsp chopped purple cabbage (optional)
  • 1 tbsp chopped coriander leaves
  • 2 tbsp grated cheese or cheese slice
  • salt as required
How to make the recipe?
  1. Break the eggs.

Notes
1. Before making any kind of omelette ensure the pan and oil is nicely heated. 2. Once you add the eggs just reduce the heat to medium this process helps in making the omelettes soft and fluffy.
3. Add little milk also aids in making fluffy omelettes.
4. You could add green chilies, onion, ginger to make varieties of omelettes.
5. Adding cheese is optional.
