Pasta in White Sauce, How to make Pasta in White Sauce Recipe

I will share with you one of my favorite pasta recipe tossed with mushrooms, broccoli and lots of cheese called Pasta in White Sauce. I have used Bluebird pasta because Bluebird is a good and economical brand. Bluebird Pastas output is also good.

Pastas…… As soon as we here Pastas or Macaroni we think about Italy however history says Pasta originates from China, some say it came from Arab and some say hails from Italy…… whoever made Pasta is worth it. I just love them and pastas are very popular across the entire world now.

You can make non veg or veg or even vegan Pastas. Pasta Recipes are easy to make and can be very nutritive and healthy. If made in the right way can taste very delicious and yummy. Pastas comes in more than 500 varieties most common ones are penne, spaghetti, shells, lasagna, bow or twisted pastas. You even get a blend of all these shapes together.

Many people love them because they have eaten pastas. I know many of friends, relatives who don’t like pastas the reason is quite obvious why? because pastas have never been a part of their diet and they are not used to eating Italian dishes. Once they eat they will keep eating pastas such is the magic of pastas. The best example are my parents and my fiancée who never liked Pastas and once I introduced them to pastas now they can’t stop eating pastas lol:)!

Moral of the story is first eat pastas and then decide if you like it or not. There is a saying you ” Got to try first time or first attempt many a things in life”. When you buy Pastas ensure you buy of good quality or brand. The heavier and colored the pastas the better they are. Do check for the expiry date before buying pastas or macaroni.

Also a beginner can easily cook pastas without getting hassled just need to remember some thumb rules which I have explained in the cooking process and some more in tips.

Take a small pan add butter once the butter melts add Milk to it. Stir it well and put wheat flour into it and stir continuously. Ensure no lumps are formed. Now switch off the gas your White Sauce is ready now.

Firstly boil water once the water starts bubbling add the Raw Pastas to it.

Add a few drops of Olive Oil, Salt to it. Now stir it occasionally after 5 mins to ensure the pastas don’t stick to the vessel. If the water is less add little more water

When you realize the difference …… When the pastas becomes soft, bigger in shape that means they are cooked well. Now strain Pasta on a strainer or with a linen cloth and rub olive oil evenly else it will stick to each other . You can even keep some water in the pastas don’t strain it completely. I always keep 2 cups of pasta water aside for making sauce or adding in the Pasta. While Pasta is cooking you can chop Garlic.

Chop Mushrooms.

Than cut Broccoli, Green chilly(optional).

Also slice Carrots into thin pieces.

Now cut Coriander or Herbs as well. Take a Pan add 2 tbsp Olive Oil to it now add Garlic. Saute Garlic for a minute on a low fire.

Put all vegetables except Mushrooms to it.

Stir all vegetables for a minute add Mushrooms and Salt to it.

Saute until the water of Mushrooms dries out.

There are 2 ways of doing it either you can either Microwave as I have done or you can make it on gas. Any way is alright it tastes the same the only difference is when you making pastas in Microwave, ensure you add plenty of fluids like water or milk else it won’t turn out well.

I have tried and tested both the ways and honestly both are equally good.

Gas Method: I don’t have pics for the Gas method.

Once the Mushroom water dries out now add the Pastas and stir well. Its time to add Tomato Puree into it. Now keep stirring lightly and be gentle else the pastas might break.

Add black pepper powder to it. Its time to pour white sauce into it. Wait for a minute check the consistency if you want more liquid than add milk.

Now pour the pasta in the serving bowl grate cheese on it.  Serve hot with garlic bread or just plain pasta is quite good enough!

Oven Method:

Once the Mushroom water dries out now add the Pastas and stir well. Its time to add Tomato Puree into it. Now keep stirring lightly and be gentle else the pastas might break.

In a Microwave safe bowl or glass add half mushroom mixture than add Boiled Pasta to it.

Now again add the left mushroom mixture and add remaining pasta to it.

Add black pepper powder to it grate all cheese on it.

Its time to pour the white sauce on it. Check the consistency add more milk and salt if required.

Microwave for about 20 mins in between do check the consistency and keep stirring if required. Your pasta is ready to be served hot

Tip for Pasta in white sauce:

  • Don’t overcook the pastas while boiling them else it will become mushy.
  • Always add salt while boiling raw pastas
  • If you wanna make this pasta more richer you can add 1 tbsp cream.
  • If you like corn you can even add boiled sweet corn into this pasta.

Ingredients
  •  100 gms Pasta (Good brand any shape is fine)
  •  1/2 cup Garlic Chopped
  •  1/2 cup Tomato Puree

  •  1 packet of Button Mushrooms
  •  2 Cheese Cubes
  •  4 cups Water
  •  2 tbsp Olive Oil
  •  2 tbsp Black Pepper powder
  •  1 Green chilly(optional)
  •  2 to strands of herb( Coriander/Thyme/Rosemary/Basil or mixed herbs)
  •  Salt as per taste
  • For White Sauce:
  •  3 tbsp Butter
