One of my mom’s quick and instant recipe is this Quick Bread Stir Fry! Me and my sis used to always carry Bread Stir Fry with vegetables into our lunch box. I vividly remember my sis used to not carry this Quick Bread Stir Fry as she used to find them jinxed. As far as I am concerned I freak on them. After a real long time this morning I made Quick Bread Stir Fry finally. We had bread and I instantly thought of making this quick recipe as we were falling short of time. My family relished this instant snack. Though I missed my sis a lot while making them.

It’s Dussera in India and we have already consumed too many sweets. So make this spicy and namkeen Bread stir Fry……

Quick Bread Stir Fry

You could make this Quick Bread Stir Fry with brown bread. To make more healthy add veggies like boiled carrots, onion and garlic. Just ensure the Quick Bread Stir Fry doesn’t becomes mushy. This will taste great if the bread is on the crispier side.

Quick Bread Stir Fry

Well folks you could come out with your own version of Quick Bread Stir Fry ;)…. May be you can create more innovations with it than me….

I won’t take much of your time. Try this recipe quickly may be when you are really busy and want a quick snack 🙂

Total Time: 8 to 10 mins

Serves: 4 to 5 people

Ingredients:

  1. 8 to 9 slices of bread/pav/brown bread
  2. 3 tbsp butter/ghee/olive oil
  3. 1 green chili chopped finely
  4. 1 potato chopped into small cubes (parboiled potatoes Or deep fried potatoes)
  5. 1 onion chopped
  6. 1/2 tomato chopped
  7. 6 to 7 curry leaves
  8. 5 to 6 garlic chopped
  9. 1 tbsp mustard seeds
  10. 1 tbsp cumin seeds
  11. 1 t/s asofoetida (hing)
  12. 1 tbsp red chili powder
  13. 1 tbsp sugar
  14. 1 t/s turmeric
  15. 1 tbsp garam masala
  16. 7 to 8 crushed ground nuts (optional)
  17. 1 t/s amchur (raw mango powder)
  18. 2 bay leaves
  19. few chopped coriander leaves
  20. rock salt as per taste

Method:

Firstly chop bread into small cubes. I just tore the bread with my hand into medium sized pieces.

Take a big wok Or vessel. Keep heat on low mode. Once oil is hot.

Add mustard seeds and cumin seeds. Also add bay leaves to it. Once it starts crackling.

Now add chopped garlic and onion. Saute for a minute. Add little salt this will enable onion to cook faster.

It’s time to add turmeric, hing, red chili powder, garam masala, curry leaves, sugar and amchur powder.

At this time add crushed ground nuts. Stir well for about 2 to 3 mins.

Put the par boiled potatoes Or fried potatoes into it. Saute for 2  minutes more.

Add the chopped tomatoes. Stir for 2 to 3 mins more.

Finally add chopped bread along with rock  salt for seasoning. Squeeze some lime juice if more tanginess required.

Stir fry the bread along with all spices. Toss and combine nicely. Once the bread is slightly crsipy and nicely incorporated with all spices.

Switch off the gas. Garnish with coriander leaves and top with butter.

Tip:

  • You could add cashew nuts instead of ground nuts.
  • Also skip potatoes if you wish to. But potatoes add great taste to the dish. Ensure you use boiled potatoes Or fried potatoes. Otherwise your dish will take  along time to cook.
  • Calorie conscious people can use olive oil instead of butter.

    What a great method of preparation. You know I always dip bread in seasoned oil, but the idea of stir frying it up like this is awesome. Goodbye bread dip and hello stir fry-yum!
