Tomato Soup with Vegetables

It is very heavy to digest big meals. It is better to eat something light but healthy. Hence I thought of preparing a Tomato Soup. But I didn’t wanted my tomato soup to be plain. So I decided to make it more healthier by adding some vegetables. That is how I came up with the recipe of Tomato Soup with vegetables. There will be lot of versions of tomato soup available. But you could always experiment in your own style. That is what feels like a big challenge to me.

I have added Baby corn, Mushrooms and some herbs for extra punch. Tomato Soup by itself is healthy. Adding nutrition will just increase nutritive value and health factor.

Tomato Soup is light and easily digested. One of the great soup to have in summer. Tomato Soup is a great way to include tomatoes in your children’s diet. I haven’t added cream as that makes it fattening. I wanted low fat or no fat in my soup. But if you wish you could add cream to make it more creamier.

Also bread croutons are added in tomato soup. However I have not added them again for low calories. As bread is deep fried in oil. So I didn’t feel like adding bread croutons.

Nowadays I am only focusing on Light meals like soup or summer specials.  Also one more thing you could also add left over vegetables in your fridge. Like potatoes, peas, spinach any left over veggies. This Tomato soup is easy and not so expensive hence can name it as  budget recipe as well.

Non veg lovers can add chicken broth to the soup for the flavor 🙂

Total Time: 30 mins

Serves: 4 People

Ingredients:

  • 4 Big Sized Tomatoes
  • Few Mushrooms
  • Few Baby Corn (Any left over vegetables would do)
  • 2 tbsp Corn Flour
  • 2 tbsp Water
  • 1 tbsp Olive Oil
  • 8 Garlic cloves chopped
  • 2 tbsp Freshly Grounded Pepper Corn
  • Few Fresh Herbs (I have used Parsley, Rose Mary You could use coriander leaves any herb)
  • Salt as per taste

Method:

Firstly take tomatoes wash them.

Just make a cross like incision on them. As if you make a incision on them. The skin of tomato comes out easily.

Blanch them in hot water. Once they are blanched. Peel off their skin.

Now grind them into the grinder to form tomato puree. Keep it aside.

Also take corn flour mix with water and keep it aside.

Take a small pan add olive oil. Saute Chopped Garlic to it  for about a minute on low flame.

Now add baby corn, chopped mushrooms Or any veggies of your choice.

Saute them for a minute. Add Tomato Puree to it. Stir well add crushed pepper corn. Let it boil for about 3 to 4 mins on low flame. Also add herbs to it.

Lastly add corn flour paste to it. Keep Stirring the soup. If you wish you could also add cream to it.

Once it starts bubbling. Switch off the gas your Tomato Soup is ready.

Serve hot with Toasted Garlic bread Or as a starter.

Tip:

  1. Use cream or milk for thickening the soup.
  2. You could add chopped chilies if you want soup to be spicy.
  3. Also you could just make a plain tomato soup. That also tastes yum!
