Aloo Pudina Recipe – an easy, healthy and delicious side dish made with boiled potatoes, spices and mint leaves. This is my mother’s recipe and mint goes well with potato and tastes great with parathas, phulkas or naan.
This recipe could be made tangy, spicy or mild as per your taste preference. Mild tempering are given of spices like cumin, mustard seed, curry leaves, green chilies along with hing. I also use the left over veggies as stuffing in my sandwich or parathas with cheese or veggies.
Potatoes and okra are 2 veggies which are loved and relished in our house. Although I love all veggies and keep experimenting to incorporate in daily dishes by adding them in parathas, puris, rice etc. Men are over grown babies and babies are babies so the women of the house has to think differently to fulfill their needs and also their daily intake 😉 although some men like to eat healthy some are fussy and my house is no exception.
I have added mint leaves towards the start and also towards the end. As mint leaves when cooked loose their fragrance and taste. So if possible add them always towards the end for the best mint flavor.
We has our aloo pudina with masoor dal, rice and salad.
Let’s make aloo pudina recipe stepwise:
- Firstly pressure cook the potatoes until tender.
2. Peel their skin.
3. Chop them into cubes or square
4. Cut chilies, mint leaves, coriander leaves and ginger.
5. Heat a pan with oil on medium heat. Once oil is heated add cumin seed, mustard seed, split gram, curry leaves and ginger. Reduce the heat.
6. When you hear the spluttering sound add green chilies, mint leaves, half of coriander leaves and saute for 30 secs.
7. Add turmeric powder, cumin seed powder and coriander seed powder.
8. Now add salt as per taste.
9. Time to add the boiled potatoes.
10. Mix all nicely.
11. Cover with a lid and allow to cook for 2-3 mins.
12. Switch off the gas and remove the lid.
13. Add rest of mint leaves, coriander leaves and amchur powder.
14. Your aloo pudina is ready serve them hot with puri, roti or rice.

- 600 gm of potatoes boiled, peeled and chopped into cubes or square
- 1/2 cup mint leaves + 2 tbsp moremint leaves for garnish
- 1/2 cup coriander leaves
- 1 tbsp oil or ghee
- 1 tsp cumin seed (jeera)
- 1/2 tsp mustard seed (rai)
- 1/2 tsp urad dal (split black gram)
- a pinch of asofoetida (hing)
- 3-4 green chilies chopped finely (hari mirch)
- 1 tbsp ginger chopped finely (adrak)
- 1 tsp turmeric powder (haldi)
- 1 tsp roasted cumin powder (jeera powder)
- 1/2 tsp coriander seed powder (dhaniya powder)
- 1 tsp dry mango powder (amchur)
- salt as per taste
