Here comes Aloo Gobi recipe which is also known as Punjabi Aloo Gobi! This is is easy to make and tastes delicious with naan, rotis, phulkas Or puris. Sometimes we make so many dishes but we actually don’t think of posting them. Wonder what took me so long to post this dish.

This recipe comes from my maid. Yes I learn recipes from anywhere I could and what could be best than learning live 🙂 from alive people. I am thankful to her for this wonderful recipe of aloo gobi.

You require minimal ingredients to make this dish. I have used amchur and kasuri methi but if isn’t available then use chat masala instead of amchur and skip kasuri methi.

This dish goes well with rotis and you could have chaas, parathas or any gravy dish or rice as accompaniment. We had ours with parathas and chaas.

Anyways lemme tell you my hubby just had dinner and he enjoyed all of it. Seeing him eating dinner and he relishing it. I felt my hard work was not in vain and I had a satisfying smile on my face. Sometimes I just cook for him I guess 😉

Let’s make aloo gobi recipe stepwise:

1. Chop the cauliflower and place the florets into a vessel of boiling water. Add little salt switch off the gas, cover then pan with a lid.

2. After 3-4 mins gently strain them over a colander.

3. Now chop potatoes into big cubes and immerse them in enough water covering them. Add little salt and place aside. This process helps the potatoes not to change their color.

4. Just before cooking this dish place them on a colander so that all the water strains out.

5. Heat oil in a non stick pan add potatoes. Sprinkle 1/2 tsp of turmeric powder over them.

6. Fry until they are evenly cooked and place them aside.

7. In the same oil fry the cauliflower florets.

8. Sprinkle 1/2 tsp of turmeric powder over them.

9. Fry until they are half cooked. Place them aside. Now In the same add ajwain seed, green chilies and asofoetida.

10. Once they crackle add the ginger julienne.

11. Add red chili powder, rest of turmeric and salt.

12. Now add the fried potatoes and cauliflower.

13. Cover with a lid containing water and simmer until they are cooked.

14. Keep stirring in between.

15. Remove the lid after 5 mins then increase the heat and stir fry for 2 mins then switch off the gas.

16. Add garam masala powder, roasted cumin powder, amchur powder, crushed kasuri methi and salt if required.

Serve your aloo gobi hot with phulkas, roti, puris or chapatis.

  • 250 gms cauliflower cut into florets Or small pieces
  • 3 tbsp oil ( 2tbsp for frying potatoes and rest for vegetable)
  • 2 medium sized potatoes sliced into small cubes
  • 1 tsp carom seed (ajwain)
  • 5-6 green chilies chopped lenghtwise
  • 1 tsp roasted cumin seed powder
  • a pinch of asofoetida (hing)
  • 1 tsp garam masala powder
  • 1.5 tsp turmeric powder
  • 1 tsp anardana powder
  • 1 tsp kashmiri red chili powder
  • 1 tbsp ginger julienne
  • 1 tsp amchur powder or chat masala
  • 1 tbsp crushed dry fenugreek leaves (kasuri methi)
  • few chopped coriander leaves for garnishing
  • black salt Or salt as per taste

Notes
1. It's advisable to immerse chopped cauliflower into lukewarm water with salt. If cauliflower has worms it will show up Or come out. So be wary of it.
2. You could use boiled potatoes instead of frying them.
3. If amchur isn't available then use chat masala.
4. Skip if kasuri methi isn't available in your region.
