Egg Bhurji Recipe with cheese is nothing but scrambled eggs with cheese. Also herbs, spices, chilies are further added to make them more flavorful and tasty. It’s also one of Mumbai’s hottest selling fast food I have just added some cheese to make a cheesy affair with scrambled eggs.
This dish is one of the most sought and favorite in our house during weekends with toasted bread and tea. I am feeling hungry just writing about it. Cheese egg bhurji could be a perfect snack or breakfast for kids and even lunch boxes if clubbed with bread or roti.
I have posted earlier egg bhurji Mumbai style and egg masala curry which also is equally good. Whenever I am bored or not in a mood to cook anything for dinner make this dish and serve with pav. I am sorted and no complaints from anyone.
The ingredients which goes in making this recipe should be easily found in your kitchen. I have used a non-stick pan as find it convenient. But you could use any heavy bottomed sauce-pan to make them. Also added a dash of butter to enhance the taste but it’ s optional.
Let’s make egg bhurji recipe step by step:
1. Crack eggs into a mixing bowl.
2. Add salt, turmeric and chili powder.
3. Also add pepper powder, garam masala powder. Beat with a fork or beater for 1-2 mins lightly.
4. Heat oil plus butter in a pan.
5. Once pan is hot add onion and saute for a minute.
6. Add ginger and stir nicely.
7. Saute until ginger leaves aroma.
8. Once the onion changes color to light brown.
9. Add the tomatoes.
10. Cover and cook until tomatoes soften. Keep stirring in between.
11. Now pour the beaten eggs.
12. Time to add coriander leaves and green chilies.
13. Once the eggs starts thickening keep stirring the spatula all over.
14. Keep stirring and the eggs would cook soon. Finally add the grated cheese.
15. Stir the bhurji until they are light brown in color.
16. Garnish with more cheese on top if you wish to. Serve your egg bhurji warm with cheese and toasted bread or pav.

- 1 tbsp oil + 1/2 tbsp butter
- 4-5 eggs beaten lightly (anda)
- 1 large onion chopped finely (pyaz)
- 1 large tomato chopped finely (tamatar)
- 1-2 green chilies (hari mirch)
- 1 tsp red chili powder (lal mirch powder)
- 1/2 tsp garam masala powder
- a pinch of turmeric powder (haldi)
- 1 tsp black crushed pepper or pepper powder (kalimirch powder)
- 1/2 inch ginger chopped finely (adrak)
- 2 tbsp chopped coriander leaves (dhaniya pata)
- 1/2 cup grated cheese or as required (use any processed or cheddar cheese)
- salt as required
