Hip Hip Hurray here comes Custard Apple Icecream that too with caramelized nuts. Custard Apples are called as Sitaphal In India. We had lot of custard apples at home. Hence I thought of making a dessert out of custard apples that everyone could relish at home that too eggless custard icecream. I love Naturals brand custard icecream in India. Hence I thought of making Custard Apple Icecream similar to Natural’s. To my surprise the Custard Apple Icecream turned out delicious and better than outside icecreams. This Custard Apple Icecream Recipe is easy to make and even more easy to eat 🙂 ….
I felt Custard Apple Icecream is quite bland so to add a bit of crunchy and nutty flavor. I have added cashew nuts and walnuts. I have caramelised the nuts and than added to the icecream. Also the custard apples are naturally used. No pulp or boiling process. Let me also tell you the icecream recipe doesn’t calls for any machine, icecream maker. You can make this at home easily without getting hassled.
Also let me share some benefits of Custard Apples with all of you. Its got lots of vitamin C, very good for eyes, skin and hair. Custard Apple also known to heal gum problems and ulcers. So do include Custard Apples in your diet. This is the best season to eat them 🙂

Total time: 25 mins+3 hours for firming
Serves: 12 people
Ingredients:
- 4 custard apple pulp
- 500 ml milk
- 18 to 20 cashewnuts
- 18 to 20 walnuts
- 1 tbsp butter
- 2 tbsp sugar
- 4 tbsp custard powder
- 4 tbsp corn flour
- 1 cup sugar Or as sweetness required
Method:
Deseed the custard apples and remove the pulp from them. Keep them aside.
Take a small pan keeping heat on medium mode. Add dryfruits along with butter and sugar.
Keep stirring them. Once sugar changes color and caramelized. Switch off the gas and allow to cool.
Take heavy bottomed sauce pan add milk. Keep on low heat. Once milk starts boiling. Add sugar and keep stirring.
Take some milk in a cup. Mix corn flour and custard powder. Stir all of them until all dissolves. Ensure no lumps are formed.
Now add this mixture to the boiling milk. Keep stirring continuously else mixture might stick to the bottom Or get burnt. Hence stirring is essential. After 5 to 6 mins milk will start thickening and cuddling. Now add caramelized nuts to it.
Roughly after 5 to 6 mins Or when the mixture is thick. Switch off the gas.
Allow the mixture to cool down. Once comes down to room temperature add custard apple pulp to it.
Just mix everything now pour the batter into desired mould.
Freeze for 3 hours Or until firm. Scoop out on cone, cup or serve with fruits chilled.
Drizzle some chocolate sauce and eat them.
Tip:
- Instead of sugar you could add condensed milk.
- Skip nuts if don’t want them.
- You could make them with coconut cream. I am sure it will taste great.

Can 500ml milk suffice for 12 servings as menyioned in the custard apple icecream recipie?

Pankajam custard apples pulp also add to the quantity of milk. It’s sufficient for 12 servings but it also depends on the size of serving and if they are dessert lovers Or not. If at all you feel it won’t be sufficient for the kind of crowd Or people you making. You can always double up the quantity as there is no harm in making more icecream than less. You can always store the icecream and eta later 🙂

Hi,
There are no machines atleast in India available to de seed custard apples. You will have to do it manually. Just divide the custard apple into a halve. Now remove each pod of custard apple and with your finger remove the seed and extract the pulp out. Repeat the same with all pods. Collect the pulp in one container. It’s quite a effort hope this helps you.

Will there be any difference in the taste of ice cream.
1..If the whole custard is heated to boil and freezed.
2..Custard is directly freezed.
For the ice cream with whipped cream,eggs and condenced milk.

When you would boil the custard with eggs, condensed milk and whipped cream the rawness would go away. Also the consistency, flavor of the custard would be better. As when you boil and heat custard it would be nice thick and creamy. If the custard is directly freezed it won’t taste that great. However it depends on your preference too!

Was wondering as to why you have used corn flour and custard powder? Most custard powders have their own flavor (vanilla, strawberry etc). Does this not affect the flavor?

I have used them as replacement for eggs. You could use vanilla custard powder which has negligible taste Or flavor in your icecream.
