Easy Eggless Strawberry Cookies recipe. They have a texture like a shortbread and are between muffin and cookie. If you bake more then it would be crisp from exterior but soft from within with a tangy taste from the berries. Due to addition of strawberries the cookie has a cool pink color. If you are fond of strawberries then you are bound to love these cookies.
I have added fresh strawberries but you could add strawberry puree as well. The only challenge while adding strawberries to the cookies are the dough gets a lot of moisture. So it becomes a little difficult to handle the dough. You could refrigerate for some time then shape them. Have given shape with the help of cookie cutter. But alternatively you could shape them into rounds with your palm.
This is an egg free, butter free strawberry cookies. You could add butter if you wish to add or add clarified butter (ghee). If you don’t have self raising flour then don’t worry make your own self raising flour. Check this link for more information on making self raising flour. To add more tang to the cookies have added lime zest and lime juice with sugar. So if you love tangy flavor then do add lime however it’s optional. Just bear in mind due to fresh strawberries in the cookies it would take a little extra time to bake then normally it takes. So please be patient just check the edges of the cookies once its baked remove them. Allow to cool if they are still little soft then bake for some more time.
Let’s make eggless strawberry cookies recipe stepwise:
1. Firstly sift all the dry ingredients.
2. Make a small well and add oil.
3. Also add lime zest along with lime juice.
4. Just combine all with a spatula. It would be little sticky that’s fine.
5. Time to add strawberries and just try to gather the mixture from all sides. Please don’t over – mix. Just place them over a foil or cling film, wrap and place in the fridge for 30 mins.
6. Unwrap the chilled mixture. Make lemon sized balls gently flatten them and place over a greased dish.
7. Alternatively you could roll the dough flat with a roller pin by dusting some flour.
8. Shape with the cookie cutter.
9. Preheat the oven for 20 mins before baking at 180ºC. Bakeat 170ºC for 18-20 mins or until the cookies are slightly brown towards the edges.
10. Allow the cookies to cool and sprinkle some icing sugar on top. Serve your eggless strawberry cookies with a dollop of jam or icecream or just plain. Store the rest in an air-tight container.

- 250 gm flour
- 1 tbsp corn flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tbsp vanilla essence
- 100 ml oil (any oil would do)
- 1 zest of lemon
- 4 firm strawberries chopped coarsely
- 100 gm powdered sugar or as required
- 1 tsp lime juice
